Hey guys, I'm Caroline Wright and I'm Alejandra Ramos. And today we're making peanut butter
caramel apples. It's one of my favorite things. I like to make these after apple picking in
New York. It's so fun to go with your friends and pick up a bunch of apples and then just
make these caramel apples. It's one of the best things to do with them. Perfect treat.
And it's great to add the peanut butter. It makes the caramel a little bit different and
so I'm going to show you a pretty cool recipe today. I'm excited. Awesome. So first we're
going to start off by making this caramel. Um I like to add the sugar into this already
starting to warm pan and add a little bit of water to help the process along. Okay,
oh there we go, we got that sizzle. Yes. Do you stir it at all? I'm going to stir it together
just right now just to get the water and the sugar together a little bit. Okay. But you
can see it's already starting to boil which is awesome. Mhmm. So the process of this is
just you know we're just cooking that sugar, getting that to caramelize and brown and uh
then we end up stopping it with the cold, we have some cold cream over here. Oh stick
these apples with the, our little sticks here. Popsicle sticks! Yes. Ah this reminds me of
like being a kid. Absolutely. Fun. So all I like to do is go ahead and stick the steam
end. Alright, lets see if I can do this. And you just, put a little muscle into it. Yeah,
put your back into it girl. Lets do it. There we go. But how far in should they go, just
like a little bit. Yeah, just to make them stable. Okay. Caramel and candy apples are
my favorite thing to get from like street fairs during the summer. Absolutely. Even
though its like such a decadent treat. I have no problem walking down the street as a thirty
year old woman with my candy apple. Absolutely not. So this is going pretty feverishly um
so like I said we're going to add some cream and then we add the peanut butter at the end.
Uh today we're using just a little bit of the Smooth Operator cuz we like to have just
that clean flavor, that delicious peanut butter thing. It brings out the caramel really really
well. Oh yeah. So actually you can see that it's already starting to turn color here.
It's cuz we have a, our sauce pan is super hot. It's going really really fast. So as
you can see, we're just ready to pour this cream into this caramel. It smells so nice
and nutty. Yes um so it's going to boil up just a little bit. It's cold so what's happening
is that it's causing the sugar to firm up around it but it's...Oh that's awesome. It's
like kitchen chemistry. I guess. It's like a mad kitchen scientist. I'm holding off on
the rest of the cream until it settles down just a little bit. Whoa, awesome! And you
know, I'm tilting the pan away from me because you know that's the worst sort of burn. Yeah.
I'm like step back. I'll just hang out over here and let you handle that. Yes. And then
you know we're adding the peanut butter too. Um so that also helps to cool it down quickly.
So we're just going to take this off the heat. I can go ahead and turn this off actually.
And we're going to add a generous amount of peanut butter. Because you know, that's the
way we like it around here. Exactly, yes. The more peanut butter the better. It's going
to make it nice and silky. And gonna be perfect texture for getting onto these apples. So
nice. Ah it already looks amazing. You get to see that it's so silky and gorgeous. The
peanut butter is really what makes it that beautiful texture. It's perfect. Smells incredible.
It's like sugar and peanut butter. It makes it extra nutty and delicious. I mean as delicious
as it looks, I know I need to not touch that. Um so what we're going to do, working fairly
quickly, I might just roll these apples in this caramel and then pass them to you just
because I don't want to cross over you with the. No no worries. It's a good activity to
have with a buddy. And I don't want you to do that so we're good. I'll be the nut girl.
I am a little nuts. Yes. It's good to do this with a buddy though for exactly this reason.
Yeah. Because you know. We can trade off. So then once you roll them in the nuts, you
just um you can give it a little second for it to set up, it's makes them extra delicious.
There you go. Sweet, I will take over now. This is great. So have you ever made caramel
apples before? I've never made caramel apples. So you just buy them? I'm just an expert at
buying and eating them. I see you're a caramel purchaser. I let other people handle the uh
the making of them. That's. And you could probably have fun with the toppings too, like
in addition to peanuts. Completely. You could do other things. Candies or whatever else.
Other things. I'm like other things. Absolutely. Or you could probably just do the caramel
on its own. Oh absolutely. Cuz I mean its already got all this amazing peanut butter
flavoring. Yes that's completely true. But it also, it's, what I want to discuss is that
it really does change the texture of the caramel. It makes it extra silky. It adds that little
something, that secret ingredient. So it's not that super super sticky. And they're perfect
for you know the fall. Bring them to your neighbors. Everyone will love you and actually,
these keep really well.These would be a great party favor too. You could probably put a
little plastic around them. Oh completely. If you have a fun fall party or brunch. I
like to refrigerate mine and um they refrigerate well for a couple of days. And what we're
doing, we have this prepared sheet um of parchment.You could use you know greased wax paper or whatever
else you have, even a greased sheet would be fine. Um it just makes for easier cleanup
and as you can see actually as you work the caramel thickens a little bit too and that's
okay. That's why we're working pretty quickly and that we only have you know eight apples
for this amount of caramel um. Would you rewarm it a little bit if it got too stiff or? Yeah,
you could rewarm it a little bit but it would be um you know you would want to do it at
a lower temperature. The point would be is not to change it drastically because then
you would end up with a different texture. Completely different thing. Um but yeah absolutely
just warming it a little bit works well too. The warmth of the pan keeps it nice and free
as well. There you have it! Peanut butter caramel apples. So lets give one a try. Oh
boy I'm excited about this. Alright. Ah. Lets dive in. There's no ladylike, cheers, yeah,
