burke who are just about to launch that new food truck called ad Mare
seafood
as you know Ottawa has given out eighteen new licenses to Ottawa food trucks are
going to be hitting the streets this May. Hello Mario and Miriam
Hi rebecca happy
so just let me tell us a little bit about what got you in
why don't you talk to us a little bit of what got you into the food industry in the first place. I hear that you have been running
like a canteen food truck for years in the city of Ottawa
yes that's correct since the nineteen eighty nine
and uh... actually it's almost a family business. my family
does the same thing in montreal
so when I moved to Ottawa
I decided just to try it just give it a try and it's been
twenty three years now
because uh...
all the food had been serving for twenty three years it's always been
I've been only the
middleman so about prepaid premade food prepackaged
from a supplier and just resell it
and all over these years i had ... you know
dreamed about making my own food and to supply my customer with it
and you know i have my own recipe and and starting from scratch
istead of being only the middleman we've been looking for a change for a little while
now
you know the past couple of
years we've had some and ideas that we were kicking around and then we
this opportunity
from the city came up and then it just seemed like such a
good fit
for us
so why would you pick a truck over a site like a storefront restaurant
blore well
i'm mobile. I've been mobile for
all these years in Ottawa and I know the advantage to be able to go to point a to
point b come to the customer
instead of having the customer coming to you
so we can do special events and all the festivals and
that'll be like uh... midway between mobile canteen and static restuarant brick
and mortar
yeah this is kind of like a family endeavour
with this new truck. do you want to talk a bit about that.
uh...
now we have a son who is going to be hoding the fort for us on the
other business for the summer well he is that
run holiday from school he'll be driving the existing mobile canteen company
well while we do this

we've we will have a team and i will be a minimum of three staff like 2 staff and myself
uh... the chef the cook and
and me and myself
in them
so do you want to tell us a little bit about what kind of thing you're gonna be
serving
we have a lot of ideas
a lot of ideas like it's almost endless ill be fish seafood
uh... you know i've tried to have no fry fish or french fry or anything like this
so so at the end and we decided i will still have it deep fryer
for probably fish and chips once a week other than that will be fresh
lobster fresh fish filet fresh
we want to change it up. we want to change the menu often depending
on what's available. What the markets are supplying.
and we don't wanna have a fixed menu we want it to
just uh...
always have different specials to have something
new on the menu different varieties
you so it'll be like a daily
a daily menu change
or will it be bi weekly. how is that going to go
probably daily but still in the same themes
May will be probably lobster month probably
most of the dishes will come from
based with the lobster and then we'll move on and so-and-so forth every week
so tell us a little bit about that
name of your company and why you called it ad Mare
well canada's national motto and on
the crest it's called a it says a mare usque
they're sure you're familiar with the same from sea to sea
