today we are going to make mumbai style dinner rolls. these are simply called pav
ingredients & quantities are given in the description box
here are the ingredients we need
all purpose flour
water
some all purpose flour for dusting etc
butter
sugar
salt
yeast
heat the water till warm. in a bowl add the sugar & yeast.
stir & add water & stir well again. let rest for 10 minutes to activate the yeast
after 10 minutes the yeast has frothed, is activated
we will prepare the dough now
to the all purpose flour add the salt
make a well in the dough. add the activated yeast and knead to make a dough.
the dough will be very sticky at this point use a scraper to collect it & knead the dough for 15-20 minutes
thorough kneading is a very important step in making these dinner rolls
do not worry the dough will be very sticky at this point
collect the dough once the kneading is done
add butter a tsp at a time till the earlier one is absorbed & knead the dough again for 5-7 minutes
once the butter is incorporated in the dough & it is knead for about 5 minutes it will lose its stickiness and become soft
collect & transfer to a bowl. apply some oil on top & cover with a wet cloth. let it rest for 1 hour
after 1 hour the dough is proved. it has risen substantially
now grease a baking tray/pan with oil all over & dust some dry flour
punch the dough & knead for few a minutes.
apply some oil on the hands & make equal sized round balls. place them in the baking tray
cover with a wet cloth & keep the dough for proving for 30 minutes
after 30 minutes the dough balls have risen. coat the top of the dough balls with some oil or milk lightly
the oven has been kept for preheating for 10 minutes at 200 deg C
the oil coating will give the dinner rolls a nice brown top after baking
after coating with oil keep the baking tray and bake for about 20 minutes at 200 deg C, in the preheated oven, till the tops are brown and the dinner rolls are done
after 25 minutes our dinner rolls are done. they are soft & the tops are nicely browned
apply a coat of butter on the top, this will make the tops soft & shiny and also prevent it from drying once the buns cool down
then run a knife around the edges to loosen the buns & remove to a plate
you can see the pav/buns are very soft & spongy
