It took some research and I found that the only French Hen worth singing about is the
Poulet de Bresse, carefully reared in a tiny area of France and famed for blue feet, bright
white plumage and their wonderful taste. These hens even have a little metal tag on their
leg when sold to show that they are authentic. By the way, how can you tell if a hen is French?
Only kidding! My apologies to any French people watching - I'll see if I can get some leprechauns
into a video somewhere as retribution... So how did the Poulet de Bresse get it's reputation?
Let's go back to 1591 when Henry IV, having stopped off at Bresse after an accident with
his carriage, tasted the bird's meat and wanted it as a fixed item on his menu.
Even now over four centuries later this French Hen's reputation positions it as a premium
bird commanding higher prices and only served in the finest restaurants.
