my training path started after
after compulsory school
with a professional training institute
in Como.

But then
my passion for cooking started in those years. After school
I started working abroad as a cook
until I realised
practical skills were not enough any more
I needed training
I exploited an opportunity provided by Switzerland: apprenticeship
I am constantly training: a dietary school
and other future plans
I succeeded at school. Luckily it was not difficult
I didn't like going to school
Maybe this was the reason why
after 5 years of high school
I decided to go working
Then, I realised that
to be competitive
to be up to date
training is necessary
When I left school I wasn't expecting anything
It was a way to change
I wanted to change
I was fed up with what I was experiencing
in that moment
I took this decision on my own. I didn't discuss with anyone
especially my teachers
I had this school in mind
for many years
I kept on finding excuses: I had no time; my job was too tiring
It was more useful to focus on my job than on training
Until I took a decision
It was the right choice
What I found was exactly what I was expecting
theoretical explanations for things
I had always done only on a practical level. It was beautiful!
