Good morning! Today we will make a very refreshing and inviting dessert
using some frozen raspberries. I have here about one Kilo of them.
Then we will use some mascarpone, 2 cups of sugar and five eggs.
some ladies fingers, about 300 grams and 100 grams of white chocolate.
If you like, you can add a bit of liquor.
In this case, I will add about a third of a cup of moscato wine.
But you could add a bit of maraschino as well. Just to give irt a hint of alcohol.
In any case, you can omit this if you like.
Now, what I will do, I will take some of the raspberries
and put them aside, because I will use them later to decorate this dessert.
I pour the moscato on the raspberries and add the two cups of sugar.
Just like this.
These raspberries can be left out to defrost, a room temperature.
I normally put them in the microwave for a few minutes.
So they defrost more rapidly and they start
to release their juice, which will moisten the savoiardi.
While the raspberries defrost, we can start the tiramisu' cream.
We have to separate the eggs,
and we will use the whites first and whip them.
We want to whip them until fluffy.
The egg whites are now whipped and I will put them in another dish.
In the same bowl I will put the egg yolks
which we will mix with the sugar and the mascarpone.

Let's start with the yolks
let's put them in the mixer.
For each Yolk we will use a tablespoon of sugar, so in this case we will need five.
When you see that you have a nice cream, then
we will add the mascarpone. 500 grams of mascarpone.
Mix it well.
The mascarpone cream is ready, so now, we will add the egg whites which we prepared before.
Be sure to do this gently
folding them in, from the bottom to the top
so the egg whites don't collapse.
See now, the raspberries are defrosted. And with the sugar they have released their juice.
This will help moisten the savoiardi.
So, I have chosen a round dish. But you can put them
in any plate you like to use.
Let's put a layer of savoiardi.
Now we will start to spread the raspberries. We will use half of the ones we defrosted.
Now we put the cream which we will also divide in two parts.
So we will be able to make two layers.
OK. Lets add the raspberries with the juice
and then the last layer of mascarpone cream.
Now we will decorate the dish. As final touch
we will grate the white chocolate on top.
Just like snow. We then can make a few decorations with the leftover juice.
