Today I teach coconut tarts
pastry ingredients: 70 grams softened butter molten in microwave
25 grams icing sugar
1 tsp evaporated milk
large beaten egg: take out 3 tbsp and add in the batter
120 grams sieved all purpose flour
add flour in 3 batches stir until it becomes a dough
wrap the dough in plastic wrap
place in the fridge for 1 hour
Filling ingredients: 60 ml milk
75 grams icing sugar, a pinch of salt, 30 grams butter
turn on low heat, cook til everything is dissolved
when butter is dissolved, add 80 grams coconut shreds in, stir well
after stirring it well, turn off the heat
leave on the hot hob keep stirring for 1 more min
afterwards remove from the hob and leave to chill
after the coconut filling is chilled
add 2 beaten large eggs and the rest of the previously beaten egg
add in 3 batches, stir well
after stirring well add 3 tbsp whipping cream
2 tsp vanilla pudding powder, 2/3 tsp vanilla extract
1/2 tsp baking powder, stir well
after stiring well, cover with lid, place in fridge for 45 mins
Today I bake 10 coconut tarts
grease butter in the mould, same procedure for the rest
after an hour
take the dough from fridge, divide it into 10 pieces
cut in half and make 5 on each side
knead the dough until it becomes soft
roll it into a ball, press with both palms
place it in the mould, press with your two thumbs
press the edges thinner
now sting holes with a fork
same procedure for the rest
10 mins ago I took out the filling from the fridge
allow the filling to get back to room temperature, stir well
preheat oven 10 mins, 190° C ~ 375° F
pour in the filling 5 mins before baking the tarts
bake on 4th stage for 15 mins
after 15 mins, turn off the heat
let the coconut tarts stay in oven for 15 mins
after 15 mins, open oven's door a little
allow the coconut tarts to cool down
afterwards take them out and put on wire rack, leave to chill
after 15 mins,
cover the coconut tart with an empty tart mould
beat out the coconut tart, same procedure for the rest
