Hey guys! Today we're gonna be making a delicious Healthy Chili!
Okay, let's start!
In this dish we're gonna be using quite a lot.
Already prepped, there are carrots, celery, peppers, mushrooms and chilies.
2 cans of beans, I got red kidney and mixed.
About a tablespoon and a half chipotle pepper, it's not necessary, but we'll use that.
4 cloves of garlic,
2 tablespoons of tomato paste,
about a cup and a half of onions,
about a pound, or half kilogram of ground beef,
some beer and a little Liquid Smoke,
oregano, paprika and chili,
2 tablespoons of olive oil, we're gonna get that nice and hot so we can get a crispy ground beef.
Just gonna season that a bit.
Just taking out some of the excess moisture.
That will often show crispier ground beef. And in go the onions.
So we're gonna season these.
Bring in 2 teaspoons of cumin, paprika,
and the chili powder.
Putting this in early will help the spices cook and release more of the fragrances.
Good, next we're gonna get in our carrots and our celery.
Another thing that I forgot to mention is that we're going to be using diced tomatoes.
Good, in go our peppers.
And our mushrooms.
And we can get that ground beef back in there.
And in go our beans.
In go our garlic.
In go our chilies.
In goes the Chipotle sauce and the Adobo sauce.
Next we add oregano.
And our Liquid Smoke, be careful with this stuff.
Just a few drops, this stuff is strong.
We'll make a little room for our tomato paste.
2 tablespoons, stir that around.
So, a cup and a half of tomatoes.
A half cup of beer.
Cheers!
Now we're just gonna stick a lit on it and let that simmer for about an hour,
you can cook it longer, but just check on it, you want to reduce and add nice thickness to it.
And lower the heat.
Okay, let's check in our chili, it's been cooking for about 45 minutes.
It's looking very nice.
We're gonna
season it with some salt.
2 little teaspoons of brown sugar.
A little season with pepper.
I'm gonna let that cook for another 5 minutes, and then I'm ready to eat.
Another thing that I forgot, I'm really good at this,
I'm gonna throw in corn, this is optional, as are most of the veggies, you can choose
what you wanna put in, other good things you wanna put in, or Swiss Chard,
or using crushed tomatoes instead.
Or even spinach in the very end.
So I'm gonna put about half a cup of corn. 53
