Hi, my name is Karl James owner of Creolesoul Catering located in Round Rock, Texas and
on behalf of Expert Village I'm here to show you how to make hog head cheese. Okay, these
are our ingredients that we're going to use for our head cheese; we're going to use some
green onions, some celery, onion, a little garlic, in a couple of the batches that we
make we're going to use red peppers to give it some heat. We're going to use our seasonings
which are black pepper, garlic salt, a little garlic powder, a little onion powder, some
red pepper. We're going to use a little bit of vinegar and instead of using a hog head,
one thing you can make it from the ears, from the feet, we're going to use the ears, we're
not going to use the whole head. You want use the parts of the pig that when you cook
it it'll give you a gelatin like broth. So we're going to use the ears and let's get
started.
