After you catch the chicken, lay it down on its left wing, put your hand gently, but firmly, on its right wing and hold the head down carefully so one eye is touching the floor (don't worry, the chicken will close its eyelid).
Don't press down hard or you will hurt the chicken. Starting with touching the beak, trace a line slowly out 6 inches at a 45 degree angle. Do this until its pupils begin to dilate. After they dilate for about 10 seconds, you can slowly remove your hand.
Eventually stop the tracing. The chicken will remain still and calm until you make a loud noise and shoo it away.
