(Interviewer: What is come from the name of “Kin-iro pan ya”?
The “kin-iro (gold)” comes from gold color of Konjiki-do (Golden Hall)
of Chuson Temple in Hiraizumi Town. And Wheat can be seen as gold color
when it blossom out in the autumn season.
I named the store “Kiniro-panya” after these meaning.
I had never seen how wheat is grown commercially before.
When I come to Hiraizumi Town and saw wheat is growing at the first time,
I became to work with breads with different feeling which I had had ever.
There are three kind of wheat in the town,
and “Koike Komugi” is especially rare kind of wheat.
Once it was made in Iwate, but there are gradually less famers who make it.
And it would almost disappear.
But, I could get a connection with Wada-san and started to make it in the town,
and then now we are making it forever.
This wheat is sweet and has a wonderful, chewy texture when I made it for bread.
We usually don’t care about the kind of wheat,
There are different of taste depends on the kind of wheat.
And I want people to enjoy the taste of “Koike Wheat” which is made only here.
Hiraizumi Town is the place which has a lot of visitors.
So, I want to make memorable breads which are made by local foods
and new kind of bread for tourist. That is my goal for future.
Message for young: You can get much information by as in internet.
But I think you can’t know the real things if you don’t see and feel by actual.
I want you not to debate whether or not to do by gathering information from internet.
I want to you to decide about future by gathering information
by taking action or having a lot of experience.
What is recommended bread?: This is bread was made after Hiraizumi was registered as World Heritage.
It was called “Benkei- no- waraji- pan” and
it has a shape of Waraji. ( Benkei: a famous historical figures, Waraji : traditional straw sandals)
It is interesting its shape, but what’s more interesting things is its ingredients.
It is used “Daikon- Shouyu Zuke (Japanese pickle
which is made from local radish with soy sauce)” and Cheese.
It is made and sold only here.
