Hello, it's Jennifer. Today we're going to make a quick and easy chicken salad. It's
a dill chicken salad that is just delicious. I know it kind of looks like we have a lot
of stuff here, but it's easy. First thing I'm going to do is, we have bagel thins. But
you can use bread, or English muffins, whatever you like. I like these. These are really nice
because they're thin. They're not too heavy. So we'll toast that while we're doing our
mixing. So I'm going to take our chopped chicken. The first thing I'm going to do is add my
mayonaise. There you go. We use about a third of a cup. Some people like a little more or
a little less. Then I'm going to add some parsley. We're going to add our dill, some
honey mustard, or you can use Dijon if you'd like - whatever flavor you like - and just
a dash of pepper for a little kick. The mustard adds a nice flavor. Okay. I have some celery
we're going to add. See? How easy. We just keep dumping it in there. We're going to be
done in 1 minute. Now I'm adding red onion. It adds a nice flavor to it. The white onions,
yellow onions are usually too much. Red is more mild. So, we're going to mix that up.
That other thing I like to add is lemon juice. Just a very small amount of lemon juice. So
I'm just going to pour that over the top, and mix it up. We'll just keep mixing until
our bagel's ready. OUr lunch is almost complete. Almost ready to go. Okay and what we'll do
is make our sandwich. Add a little bit of lettuce, tomato, and I like to add sprouts
too. Those are alfalfa sprouts. Now this looks delicious. The smell is delicious. You have
to make this. Alright. So now, we'll take our toast out and let's make our sandwich.
We're just about done. Easy. Alright. So our bagel thins are ready. Nice and toasted. SO
we'll add a spoonful, well, a couple spoonfuls. Sometimes it's nice to put it in the refrigerator. Let
it chill for a little while, but it tastes good either way. Alright. We have a little
leftover. Use as much or as little as you like. Let's add our lettuce. Use spinach,
use mixed greens - whatever you like. Get some veggies in there. We're going to add
our tomato and put a little bit of sprouts on there. Voila! You just made lunch. We're
