>> Clare: Hi, I ‘m Clare, welcome to my Wellness Blog. This month we’re going to
focus on a super swap, for all those who are busy, this might help you get in some good
meals. So today, we’re gong to be working with my good friend, Audriana.
>> Audriana: Hi, I’m Audriana and I have two kids of my own, and this is a great way
for us as friends to spend time together and help each other out.
>> Clare: We’re going to start with our olive oil, over a medium heat in the pot.
And we’re going to add our onions, and we’ll cook them until they’re slightly brown to
carmelize them. So now we’re going to add our spices and our tomato paste.
>> Audriana: All right, so now we’re going to add the garlic.
>> Clare: And the kids can help out, too. We’ve got Sebastian with our tomatoes. Xavey
has our sweet potatoes. Rose is coming over with our green chilies, and we’ve got our
black beans.
>> Clare: Now we’re going to add the veggie stock, and we’ll let it cook.
>> Clare: So we’re going to add the quinoa now.
>> Audriana: Is that how you pronounce it?
>> Clare: Yeah, its actually from South America and from the indigenous culture.
>> Clare: So while that’s cooking, we’re going to finish prepping the rest of the ingredients.
We have our cilantro to cut up, and we have our avocado.
>> Clare: So now we’re going to serve up our chili. We’ll have a little bit for now
and we’ll save the rest for later.
>> Audriana: And I’m going to add some meat to this.
>> Clare: So we’re going to add a little garnish. And here’s our leftover supper
to swap.
