Hi, I am Jonny. Welcome back to my food fest series. In this episode, I am going to show
you how to make a cracking little dish, baked cod with chorizo.
[music] First of all, I have got two pans coming up
to temperature. I am going to go in with my chorizo first and at the same time, I have
got this pan coming up to temperature. This is what I am going to bake my cod in. So I
have got my cod here, just two cod. It can be served with ***. It can be done with
haddock. Anything that is a little bit more sustainable. *** is a great source for
that. Get yourself a little bit of salt and pepper, little bit of oil. So I am going to
do a little bit of salt and pepper. It is important to pat the fish dry as well. I do
not want it wet.

So, I have got my chorizo bubbling away with my, this is, onion, chili, thyme, and garlic.
Be careful because the thyme will spit at you. Then I am going to go with a handful
of leeks. The quantity depends on how much you want to use. You can use it all, but I
like it to where it is not full of leeks. I am not trying to make this a leek dish.
I want to really emphasize that chorizo flavor. At this stage now, you just want to add a
little bit of chicken stock. I am looking to bind it. I have got my fish here and I
am looking for that sort of color. Get yourself a tray. Have your oven already preheated at
about 165 or 170. Carefully place it on to the tray. Stick it into the oven. So that
is it, five minutes in the oven. Follow the ingredients. Make sure that you look at the
description box. Get all of the ingredients and all the measurements are there because
it is going to be spot on. So the fish is ready. I am going to show you exactly how
I know that the fish is ready. If you can see here, it is the same as meat. If it is
firm, it is a little bit overcooked. As you can see here, it is just starting to break
away. That is when you know that the fish is perfect. So I have got my broth hot. Grab
yourself a plate. Get your chorizo broth.
Really simple. Really delicious. So much flavor in this. Be very gentle with your fish. It
is still very delicate.
