So it's funny you know we started
at 2 a.m. and now that we finished picking you think "phew"
The pickers are all like " we're done we're gonna have a donut and some Gatorade"
but I
have to go and do the next part of the work which is
sorting the fruit. I want make sure, especially
since it was a night pick, that there isn't anything that I missed
that we got in the bins that we don't want in the wine. And
and so then that'll take a while and then we have to load the press
because I'm making rosé. My rosé is a little different. A lot of people
make rosé as a saignée of
their red wine. So they're taking off summer the juice
when they pick for red wine and are usually doing it to make a more
concentrated
redwine but the the benefit is they get some extra juice that
they can adjust and create a rose.
But I make mine as an intentional rosé, so this is all pressed
like a white wine. So we're going to load the press
let some of the colors seep into the juice
and then it'll be another three
or four hours on a slow gentle press cycle.
I don't expect to finish what I'm doing until about four o'clock,
and then I'm picking again tomorrow
at six o'clock in the morning.
