I am Sally McNeill, Family and Consumer Science Agent with the NC Cooperative
Extension in Union County North Carolina and today I wanted to demonstrate how
easy it is to dehydrate tomatoes. It's simple to do and a big cost savings,
especially if you grow your own tomatoes. If
you have ever purchased a package of sun-dried tomatoes in the store, you know
how costly they can be. So dehydrating your own is a great option, especially if you
planted more tomatoes than you know what to do with.
Start with clean hands and equipment. Wash the tomatoes and put a small slit in
the end with a knife. Dip tomato into boiling water for 30-60 seconds
to loosen skins. Remove and plunge into a bowl of icy water.
The skins should easily peel off. Then slice into 1/4 inch slices and place
on dehydrator trays. Dehydrate in a factory made dehydrator at
140 degrees until they are tough to crisp in texture.
Store in freezer bags, canning/freezer jars, or seal with a vacuum sealer.
Be sure to label and date.
So you can see, having your own dehydrated tomatoes to add on top of a pizza, or to
add to your favorite spaghetti sauce or to put on top of pasta with a little cheese is
an easy way to enjoy summer tomatoes all year round.
