Hey there. Lacey here with A Sweet Pea Chef, and today we are going to make a delicious
sweet and super rich strawberries and cream steel cut oats recipe using Bob's Red Mill
Steel Cut Oats that is so delicious. So let's get started.
First, combine three cups plain almond milk with one cup coconut milk in a large deep
stock pot, and then bring to an almost boil. Add one and a half steel cut oats and cook
stirring frequently for 20 to 25 minutes until the steel cut oats have pretty much absorbed
all of the liquid. If you've never tried steel cut oats before, they're really good. They're
kind of like rolled oats but a little bit chewier because they're less processed. They're
also lower in calories and a little bit lower in the glycemic index as well. So they're
really good for you.
Remove from the heat, and then add in a cup of sliced strawberries and two teaspoons vanilla
extract, and then let it sit for two more minutes. While it sits it's going to get even
more creamy and thick. For our oh so tasty syrup, we're going to combine one cup pure
maple syrup and one cup fresh strawberries over medium high heat, and then we are going
to simmer that until the strawberries become tender. This should take about five to eight
minutes.
Finally we got to add a dollop of tasty cream. So go ahead and combine a third of a cup Greek
yogurt with one teaspoon of vanilla extract, and then stir together. Thanks so much to
