Hi, my name is Tara Gidus, I am the official nutritionist for runDisney
and i am joined today by Chef Gary Jones, the culinary dietary specialist
here at Walt Disney World and not only is Chef Gary a chef, but
he is also a marathoner, tri-athlete and about to become an ultra
triathlete.

so what we're going to do is pick his brain on
as a chef and athlete
what do you have in your kitchen? So tell me
your pantry staples what do you have in your pantry as a chef and runner?
so as a chef it really is all about adding
different flavors so i have a wide variety of dried spices
I have a lot of ethnic ingredients as well of course the rices and the pastas
and then you get into the refrigerator and got rice milk and almond milk
and again a bunch of refrigerated condiments to add flavor to my food. So you always make sure that you're
stocked
Always stocked. Probably more than stocked. Probably. But that's a chef's home! Of course.
So my other question is
we're all busy, so what are your tips for something you can
make ahead and just reach in and warm it up or have it right away.
absolutely. I'm all about make ahead.
Brown rice is the fastest and easiest is due to the rice cooker.

because that could be grilled sauteed
and probably a roast chicken as well. And what do you do with that roast chicken? Well we could
put it in a sandwich or in a pasta dish or you
know, right off the bone standing at the counter top. Great! And then you were telling me roasted vegetables too.
Always a lot of roasted vegetables! I'll make kale chips
I grow kale in the backyard.
Kale chips, onions carrots, just all roasted and it goes and whatever dish you're making. So all
that's in the fridge ready to go, take it out
and warm it up?
Absolutely, that easy!

from someone who wants to know what do you eat before a run?
so i run at
four forty five in the morning so there's not a whole lot of food at that hour but
typically I'll eat a nutritional beverage and usually I'll have a smoothie from the
previous day, a little beet smoothie or a green smoothie and or a banana.

to fuel you of course because you know you're supposed to eat something before you run
