Helen McMahon for Expert Village. Our meringue is beating away. We tried a few moments ago
to see if the meringue was ready and it failed the test at that time. The test is to take
a clean finger and take a bit of the meringue and this time it’s perfectly clear the meringue
is ready there is no feeling of graininess of the sugar, so now the sugar is thoroughly
beaten into this mixture. I’m just going to scrape down the sides one more time and
then it will be ready to add the next ingredients. Give it one more final beating before we take
it away from the mixture.
