Hey, its Lacey here with the Sweet Pea Chef. And today, we are going to make some delicious,
high-protein lemon blueberry pancakes. That will make it so you can have pancakes again
for breakfast and stay on your healthy lifestyle. So let's get started.
To make the batter, in a blender, combine one-half cup old-fashioned, uncooked oats,
three egg whites, one-half cup cottage cheese, two scoops vanilla protein powder, two teaspoons
freshly-squeezed lemon juice, a quarter teaspoon fresh lemon zest, and a quarter cup of water.
Now, we're going to blend all of this until the mixture is very fully pureed. You may
need to scrape some of the batter from the sides of the blender, as it does tend to stick.
Once it's pureed, pour into a large mixing bowl, and then fold in the two-thirds cups
of fresh blueberries. You could also use frozen blueberries for this recipe if you don't have
fresh. Heat a griddle or a fry pan over medium-high heat, and then add enough coconut oil to lightly
grease the pan. Should be about a teaspoon to start.
Once the oil is hot, pour one-third of a cup of that pancake batter onto the center of
the pan. And then we're going to allow it to cook for about two to four minutes, or
until the edges start to harden, and a spatula can easily slide underneath the pancake. Flip
over, and then cook an additional two to four minutes, or until the batter is cooked through.
Now, repeat with the remaining pancakes.
When I make these pancakes, I make a delicious lemon yogurt topping to go on top, so I'm
going to show you how to do that. It's super easy. All you have to do is combine a quarter
cup plain Greek yogurt, a tablespoon honey, a teaspoon of freshly-squeezed lemon juice,
and a quarter teaspoon lemon zest in a small mixing bowl. To serve, top the pancakes with
the lemon yogurt sauce, along with just a few fresh blueberries and a little extra lemon
zest, if you'd like.
Just one of these pancakes has only 127 calories, 15 grams of protein, and 2 grams of fiber,
making it a perfect, nutritious breakfast or snack to stay on your healthy life style.
