Today on The Stay At Home Chef
I'm showing you how to make
Oven Roasted Baba Ganoush
Baba Ganoush is a tasty middle Eastern dip that is
one of my favorite ways to eat eggplant
To start you'll need to preheat an oven to 400 degrees Fahrenheit
and lightly grease a baking sheet
Then you'll need 1 eggplant
We'll take the eggplant and slice it right down the middle lengthwise
so that you have two pieces
We'll flip them over so that they're skin side up
and then take a fork and give it a few good stabs
so there's about a dozen fork holes all around
This is the fun part and you can kind of work out
all of your aggression
Now, next eggplant has a bitter liquid inside so we need to draw that out
So we'll flip these flesh side up and sprinkle on
about 1/2 teaspoon of salt
and the salt is going to draw out all of the moisture
from the eggplant and that will pull out that bitter liquid
Let it sit like this with the salt on top for at least 10 minutes
After 10 minutes you'll see some liquid on top
You want to rinse it off in the sink and then I just
pat them dry with a paper towel
Set your eggplant aside for a second and then you'll need
a whole head of garlic
You have the root side of the garlic and you have the tip
and we're going to take a sharp knife and cut off the tip
to expose all of the cloves inside
If you haven't already figured it out
we're going to roast a head of garlic along side our eggplant
Put your head of garlic down onto a square of aluminum foil
Then on the other side of your baking sheet
place your eggplant flesh side down
Then we're going to take about 1 tablespoon of extra *** olive oil
First just drizzle a little bit right onto the garlic
and then wrap that up tightly in the aluminum foil
Then drizzle the remaining tablespoon of olive oil
right over the top of the eggplant
Then we're going to roast this in the 400 degree oven
for about 30 minutes
After 30 minutes your eggplant and garlic should both
be nice and soft so use a spatula to flip your eggplant over
so that it's flesh side up and then you'll use a large spoon
to scoop out the flesh
Place all of your eggplant into the bowl of a food processor
Then we'll unwrap our garlic
and give it a squeeze and all of the cloves should pop right out
It helps if you let the garlic cool off a little bit but I have tough fingers
Once you've squeezed out all of the cloves
we'll add in 1/2 teaspoon of salt
the juice from 1 lemon so about 1/4 cup
and then 1/4 cup of tahini
Tahini is a sesame puree that should be easy to find
It should be in your local grocery store
Mine carries it next to the peanut butter
Then we'll just pop the lid on and puree this until it's smooth
And that's it!
Baba Ganoush
Transfer it all to a serving dish and pop it in the fridge
to let it chill before serving.
I serve mine up garnished with a little bit of
extra *** olive oil and freshly chopped parsley for color
Serve it up with some pita chips or pita bread and veggies.
