Today we will make bedmi poori.
Let's see what all ingredients are required for making bedmi poori.
Wheat flour - 2 cup (250 grams approx)
Urad dal - 50 grams (soaked)
Samolina - 2 tbsp
Salt - 1/2 tsp
Red chilly powder - less then 1/4 tsp
Cumin seeds - 1/4 tsp
Asafoetida - 1 pinch
Mango powder - 1/4 tsp
Coriander powder - 1 tsp
Garam masala - less then 1/4 tsp
Green chilly - 1 (finely chopped)
Green coriander - 1 tbsp
Ginger - 1 inch piece (grated)
Oil - for mixing in flour and frying poori's
Coarsely grind the dal and knead dough first for making bedmi poori.
Before kneading dough,add semolina,salt and 1 tbsp oil in the flour.
Mix all ingredients nicely.
Add little water at a time.
Knead a soft dough for making bedmi poori.
If dough is kept too hard then it might splatter while frying.
Always remember of keeping the dough soft for bedmi poori.
Bedmi poori can also be prepared by mixing ground dal and all spices in the flour.
But we are making stuffed bedmi poori.
Dough is ready. Knead it for few more minutes to make it softer.
Cover the dough and keep it aside for 20-25 minutes for fermenting.
Now make pithi or stuffing for the bedmi poori.
For this take ground dal,salt,mango powder, coriander powder,red chilly powder,
garam masala,cumin powder,green chilly and green coriander in a bowl.
Mix all ingredients really well.
Stuffing for bedmi poori is now ready.
Divide the dough into small parts.
Now roll the balls giving them a round shape like this.
Roll it into a round circle with 2 inch diameter.Place 1 tsp stuffing and seal from all sides like this.
Flatten it slightly with your hands.
Like wise prepare all stuffed balls.
Roll the poori with help of a rolling pin and keep it little thick.
When oil gets heated,gently place the poori in pan for frying.
Fry 1 or 2 poori or as much as possible at a time.
Press it slightly with ladle so that it becomes puffy
Meanwhile fry rest of the poori's.
Grease the rolling plate with oil before rolling a poori.
Fry bedmi poori on low flame until it gets crispy.
Flip the sides when they turn golden brown in color.
Take out bedmi poori when it gets brown in color.
Mouth drooling bedmi poori is ready.
We have used approx 300 grams wheat flour and with this much quantity you can make 20 poori's.
Serve bedmi poori with steaming hot aloo masala sabzi.
