judges! > SOT JC "Our guest
judge tonight is Chef Paul
Wenland. He's retired from the
U.S. Navy, where he cooked for
Americans finest, and royalty
government officials. Last year,
he received the STC Faculty of
the Year Award. Returning from
round 1 is
Chef Jennifer Guerra from both
The Republic Bar &
Grill and Santa Fe Steakhouse.
This mother of
six discovered her passion for
cooking at the age of
13. She's a graduate from the
Culinary Institute of
America in New York. And also
ready to judge is Executive Chef
Santiago de la Cruz from the
Club at Cimarron. With 24 years
of
culinary experience, he's
certified by the Texas
Chefs Association and the
nationally accredited
American Culinary Federation." >
SOT JC "it's time for
our judges to taste the first
dish, the boss Hogg
sandwich. " > JUDGE JENNIFER
"As big as a fan that I am about
sandwiches, I am. I wish there
was something else on the plate,
to make it look
a little bit more appetizing.
And I love that the yoke is
still soft in the egg. And I
would totally sit down for a
late night snack, and eat that.
> SOT JC "Well I see that
you're really enjoying the
plate. I see that you are kind
of quiet over there,
what you think about this
sandwich. "
>JUDGE SANTIAGO "it's good, I
like it. I like the
bacon, but I love bacon. > SOT
PAUL "I believe I
see tomatoes over there. And I
only got a really small
piece. I should have covered the
whole thing.
And should have set the plate up
a little better, for
presentation. You have it there,
and then ***. It
needed something to bring it
out. To give it some
color." >JUDGE SANTIAGO "maybe
a side dish. > SOT JC "I will
give you a few minutes to jot
down your thoughts >MUSIC.......
> SOT JC "Alright judges this is
your second dish. And its
stuffed chicken with pesto.
> JUDGE JENNIFER "been in that
pan I little too
long." "It is dry." > SOT JC
"Judges your
thoughts..." > JUDGE JENNIFER
"It is
over cooked. The seasoning, at
least for me,
is excellent. The pasta has
great flavor. The stuffing
really wasn't a stuffing. It was
a topping.
> JUDGE PAUL "the pesto was not
bad. The chicken,
dried out. The top is very hard.
The pasta wasn't
bad. > JUDGE SANTIAGO "The
chicken was okay. To me, the
asparagus was okay as well.
Presentation I thought was good
and actually the
pesto tasted pretty good. " >
JUDGE JENNIFER "I
think this person can really
cook. Probably got thrown
off by the timing of the
competition a little bit.
Because the flavor is really
spot on. It's just that little
technical issue. But it's good,
really good.
> SOT JC "Well judges we will
give you a few minutes
to rate the plate." >
MUSIC... > SOT JC "Alright
judges I hope you left room for
more. Here is our third dish,
pork tostone with
mango relish. " > JUDGES "It
smells
delicious. The aroma is there. "
> JUDGE PAUL "In my opinion, the
pork is
overcooked. But not by a long
shot. It is just barley
overcooked. " > JUDGE SANTIAGO
"The relish is actually good. I
like it. I like the pork. I
thought it
was cooked great. " > JUDGE
JENNIFER "I
cannot make up my mind about it.
I think it has
components that I like. The
flavor is good. But the
texture is unappealing, to me. >
SOT JC "I will give you guys a
few minutes to judge the plate.

final dish. It's basil pork
tenderloin with blueberry
sauce, and mashed sweet
potatoes.
> JUDGE JENNIFER "I have to give
this person credit for trying to
work with a lot of flavors.
Different
items. Brussels Sprouts, my
all-time favorite. Most
under used vegetable. So I got
to be happy about that.
> JUDGE PAUL "Totally" > JUDGE
PAUL "I like sweet potatoes" >
JUDGE JENNIFER "I have to say, I
do not dislike the plate. The
pork is good.
It's cooked well. " > JUDGE
SANTIAGO
"Sweet potatoes go with pork,
Brussels sprouts go
with pork and sweet potatoes,
bacon goes with
everything." "LAUGHTER.."
"Blueberries have this sweet
tartness to them.
The whole thing blends together.
It is holidays right
here. " > SOT JC "Alright
judges,
we appreciate your comments. We
will give
you a few minutes to rate the
dish."
