>> Hello. My name is Jasmine Green, and I'm
from Alfred State College teaching you how to make a happy birthday cake.
In a traditional happy birthday cake, you have to trim the tops to make sure
that both layers are even flat surface.
So here I'm going to demonstrate how to trim without taking off too much cake.
[ Background Sounds ]
You want to trim and turn your turntable so you get a nice even cut.

Remove the cake, and as you can see, it's a nice even layer.
You want to do the same with the second layer.
It's important not to trim off too much because then you don't have enough cake,
and a traditional happy birthday cake should be three to four inches high.
[ Pause ]
As you can see, this one's really much higher than the first one.
So we're going to just go ahead and do a second trim.

As you can see, I'm only trimming off a little bit like this,
meaning that I'm getting a nice flat even surface.

Now you have two eight-inch layers.
When you flip them, you have a good cake that's meeting the requirements
of three to four inches.
