I'm speaking with Susan here from Saugus
and how did you name this place Lil-N-Chicks?
Well, the name is Lil-N-Chicks,
Lil is for my grandmother whose name was Lillian and
Chick is for my mother whose nickname was Chickie.
I've always had a fascination kind of with ice cream when I was a kid,
the first job that I had, I used to work the feast
down the North End selling slush for a friend of mine who
had one of the stands down in the North End and we used
to go down for all the feasts on the weekends and my
job was running the slush stands.
How did you start at this?
I started the store about two years ago and it took a long time in
getting it together because all of the wood,
everything that you see in the store all came from Italy.
I looked... I did a lot of research on the internet about what the best
equipment companies were and basically
found that all the best stuff is in Italy so I
put it all together and it took a long time to get all this equipment here
and to build the store out so it took about a year and a half to build the store out.
So, it was about two years in process from when
we started construction until when we opened.
Did you have kind of training to have to go through here to make it to this point?
Yeah, I went to...what was called Carpigiani's
Ice Cream University in North Carolina.
Well, if you want to make good ice cream you got to go and learn from people
who know more than you and you know I'm really a social worker so
this was getting into a whole new field for me so I tried to
seek out the people with the most knowledge and then go to their seminars
into their...the courses that they had so that
I could put out a nice product.
It's fun, it's a lot harder than I think people would realize
