Add 2 Tbspn of Oil in a Pan, Now add in 1/2 tspn of Mustard seeds & allow it to crackle.
Add a Tbspn of minced ginger & Garlic. Fry this for 10 to 15 seconds.
Add 1 Large thinly sliced onions. Fry this until golden brown for about 5 to 8 mins on medium flame.
Keep sauteing the onions & fry them until they are golden brown. Add in salt as per your taste. Close lid & cook for 1 or 2 minutes.
Now the Onions are golden brown & are done:)
Add 2 medium chopped tomatoes.
Keep sauteing the tomatoes for few minutes.
Now add in the spices. 1 tspn Chili powder, 1/2 tbspn Coriander powder, 1 tspn cumin powder, 1 tspn garam masala powder, 1/2 tspn black pepper powder, 1/2 tspn turmeric powder.
Add 2 tbspn of water to blend all the spices & keep sauteing for 3 to 5 minutes.
close lid & continue to cook until the tomatoes are soft.
Now the masala is cooked well & you can add in a little water. Around 1/4 cup & saute well.
Add 1/2 tspn of sugar to balance all the flavors.
Add curry leaves & saute well
Cut the boiled eggs into half & shallow fry them in a tawa for couple of minutes on both sides.
Now transfer the shallow fried eggs into the masala that is prepared.
Give a slow mix & the egg masala is ready to serve.
Transfer the egg masala into a serving bowl & enjoy.
