Welcome to another What I Ate Wednesday, where I share all my vegan eats in a day. In this
episode, I also share some of the photos you guys sent me and announce the secret word
winner from a few videos ago.
This day started same as last week: with a hot mug of anti-inflammatory turmeric tea
to help my wrist heal. Check out that video if you want to see exactly how I make it.
But basically we have turmeric, black pepper, cinnamon, cardamom, cashews and dates, simmered
with water, blended and strained. I add more water to dilute the brew but it stays creamy
and rich. It reminds me of a chai latte so it's all cozy and fall-appropriate.
For breakfast I made a tofu scramble inspired by a recipe by Astig Vegan and it really really
reminds me of the type of garlicky egg scrambles I had as a kid. This one was for my boyfriend
who is home on vacation and for mine, I added cilantro and sriracha.
I was pretty happy with that, until I these beautiful pancake pictures. Then I wanted
pancakes.

In the afternoon, I made some oil-free banana bread, subbing apple sauce for the vegan butter
that I usually use.
It had that distinct texture that happens when you sub applesauce for oil or butter;
kind of overly moist and slightly rubbery.
But I toasted a slice and put peanut butter and jelly on it and it was actually really
good. In fact, it was super filling and I wasn't hungry for hours afterwards. Kinda
nice since I was trying to rest.
Still, it wasn't a very complete lunch. You guys have sent me some great lunch pictures.
Or maybe these are dinner pictures. I can't tell.

Or this beautiful sushi by 14 year old Madeline Dwight. I am so impressed.
Vegan food can be super healthy, super junky or anything in between, really. It's up to
you and your own goals.
Even pizza can be very good for you. Pudeldesign made their first homemade pizza using the
tutorial by The Vegan Corner with the vegan mozerrella sauce that I shared from VedgedOut.com.
Depending on where you live, you don't have to make every meal yourself like I tend to
do. Springrain sent me this great spread of vegan sushi and gyoza from wagamama. I wish
we had wagamama here in Calgary.
As for myself, I laid on either the couch or the floor because of my back, and snacked
on these sunflower seeds.
If I had the choice though, I would love to have had these crunchy chickpeas and salad,
or some homemade bread with vegan EAT loaf, or some stuffed buns.
Speaking of buns, cheese goes well with buns. Homemade vegan cheese of course! Backcountrygirl's
instagram post is of almond-based cheese and threeheadedcerb shared this cashew cheese
with me on twitter. As always, i'll link the recipes below.
You guys have seen me have this dinner a million times: vegan butter chicken. I had store bough
naan with this and I have to say, I'll never buy this brand of naan again. It was horrible.
You know what's not horrible, these super delicious looking dinners that you guys sent
me.
Is it weird that I get a little jealous of your pictures even though they are usually
of recipes that I've shared with you? Like this Hainanese Rice.
Or these curried red lentils.
Speaking of lentils, that was the secret word that I had you guys send me over twitter,
snapchat or Facebook. Out of everyone, I had to draw a name randomly and the winner is
