but you can use also other qualities

we start
by preparing eggplants, make a basis with tomato
on the oven pan bottom with
salt, then we fry the eggplant slices
for the parmigiana they must be
very thin
the thiner are the slices the better will be the parmigiana
then sprinkle the cheese
always
by making
a homogeneous layer of thin slices
of mozzarella or
you can also cut it to very small cubes
and now
sprinkle
with parmesan cheese
then eggplants again
add also basil leaves
keep some of them apart for the last layer and maybe
for parmigiana decoration
using fresh leaves
they will flavor and perfume
follow by alternating the layers
until the ingredients finish
or you haven't enough space in the pan
at the last layer abundant tomato
cover well the parmigiana
sprinkle again
with grated parmesan cheese
put the parmigiana into the oven
parmigiana, as all the pies, cooks better not a very high heat so
about C 150 for rather long time, if you have a ventilated oven also better
it will make you easier it to compact
