Hi guys! Welcome to fiona's food. Today I'm gonna show you how to make a really simple chocolate cake
and chocolate ganache to decorate.
So what you need to make the cake is 350g caster sugar
225g of unsalted butter 3 eggs
2 teaspoons of vanilla extract 300 millitres of milk
300g of plain flour 6 tablespoons of cocoa powder
1 1/2 teaspoons bicarbonate of soda And a pinch of salt
You want to preheat your oven up to 180 degrees Celsius, and grease a 9 inch cake tin.
Now onto making the cake. In a large mixing bowl, add the butter and sugar. Cream these
together until the mixture is light and fluffy and looks a little like this.
Now you need to add the eggs, one at a time, and mix between each one.
Mix in the vanilla extract, then put this mixture to one side
In another bowl, we're gonna mix the dry ingredients, so that's the flour, cocoa powder, bicarbonate
of soda and salt. Stir this gently so it's all well mixed.
So now what we want to do is alternate between mixing a little of this dry mixture and a
little of the milk into the large mixing bowl. Keep swapping between them, mixing between
each step, until it's all incorporated well.
Once it's all nice and smooth, pour the mixture into the cake tin. You need to bake it in the oven
Now your cake's ready to go in the oven.
You need to bake it in the oven for about 45 minutes. After that time, Stick a skewer or cocktail stick in the middle and
if comes out clean, it's done. If not, leave it in for another 5-10 minutes.
Once it's ready, take it out the oven and after a few minutes
transfer it to a cooling rack.
Now to make the ganache. To make this you're gonna need
200g of dark chocolate
100g of white chocolate 10g of butter
300ml of double cream
Break up your chocolate in to small pieces and put them in a heat proof bowl. Most recipes
tell you to just use dark or bitter chocolate, but I use a little white chocolate to make
the ganache just that bit sweeter.
Next, Pour the cream into a saucepan and put it on a medium heat until just before boiling. As soon as it's hot enough, pour the cream
over the broken chocolate. Leave it for a minute or two.
Stir the mixture slowly, and you'll see the chocolate will start to melt and mix in with the cream
Add the butter now and mix that in too, which adds a nice shine to the ganache.
Once you've mixed it all in, it should look like this.
To decorate the cake, you want to keep it on the cooling rack, but put it over a tray,to catch all the ganache that will drip off.
First step is to add a crumb coat - that's
just a little layer of the topping, to catch the crumbs and make a smooth surface. Once
you've done that, leave it to set for 5-10 minutes.
Now you're ready for the main event. Pour the ganache onto the cake, pouring evenly
and letting it drip over the sides.
With a spatula, slowly and lightly push the ganache over the edge of the cake. Cover up any gaps and leave to set, in the fridge for about
an hour.
And there you have it, you're done! I finished my cake off with a few raspberries, but you can add whatever
you like, or just leave it as it is!
