Hey guys! This is Heather from HealthVeganRecipes.net. Today weíre gonna make some marinated vegetable
skewers.
You guys have been asking for some recipes that you can do on the BBQ or the grill and
this one is an excellent one to add to any BBQ to give you a vegan option and also to
get more vegetables on with the meat if there are meat eaters around so a good thing to
do anytime you have a BBQ.
Now what I like to do is marinate the vegetables before they go on the grill, give them a little
bit of flavor and just make them a little more interesting and what Iím gonna use are
some limes.
Iím gonna take the zest off of these limes so this is where you take a zester or a grater
if you donít have a zester and just peel off the very outer layer of the skin.
So Iím gonna put that into a bowl along with the juice of this lime and all you do is once
you get this zested - go ñ you just cut this lime in half and what I normally do is just
take my zester, poke it into the lime and give it a squeeze but if you have a citrus
juicer, itís even easier you just press the citrus onto the juicer, give it a twist and
a press at the same time and youíll see all the juice.

And Iím gonna do some - two limes, you can also use lemon juice here if you prefer and
if you have a big lemon you probably only need a juice of one but hey extra juice never
hurts. So get those juice and then weíll move on to the vegetables.
Ok! So I got my two lime juice in here and Iím gonna pour the juice into the bowl with
the zest and then Iím going to add some fresh basil from the garden.
Now this is a slightly different type of basil and Phil actually forgets what itís called.
If anyone has any ideas you can let us know. Iím thinking itís something maybe lemon
basil, Iím not sure.
Anyway, if you know, let us know, weíre curious. So Iíve got that chopped up so that the flavor
comes out of the leaves. If you chopped it open a little bit the flavor will come up.
Alright! Going to add some salt if I can find it in the cupboard just a little bit and then
give that a whisk with a fork or whatever utensil you like, really. And then what Iím
gonna do is chopped up the vegetables and throw them into this bowl to marinate.
And I like to do it this way, some people marinate their vegetables on the skewers but
I find this works better because you can actually stir up the vegetables as theyíre marinating
and make sure they get some juice.
So the vegetables Iím going to put on my skewers are zucchini and what Iíll do here
is just chopped it into chunks and then into quarters so that I get a nice big piece to
put on my skewer. Iím gonna do mushrooms and same thing Iíll cut it, Oh! This one
is kinds big; I might cut it into six.
So then you can put this nice big piece on the skewer, Iíve got red pepper, same thing,
some chunky kind of pieces, Iíve got some sweet onion so Iíll cut the both sides of
this one off and same thing cut it into chunks.
And Iíve got some cherry tomatoes and they donít really marinate but Iím gonna throw
them in here anyway just to keep everything together.
Ok! So Iím gonna throw that all in the bowl and let it marinate. Youíll want the mushrooms
to soften up a little bit so give it maybe twenty or thirty minutes marinating.
Stir it occasionally while itís going so that each vegetable has a chance with the
lime juice and the basil.
Sometimes stirring them in a bowl can be a real trick so if you need to you might want
to transfer it to a plastic bag and then you can just shake them every so often. Get them
really nice and coated in the lime juice.
Alright! So Iíve got the grill lit up and Iíve had it sitting on medium so itís really
really hot and then Iíve brushed the grill off to get rid of any leftover residue. Now
what Iím gonna do is take my oil sprayer and just spray the grill so that these guys
donít stick and so that theyíll get some nice grow marks on them.
And this sprayer is just filled up with some extra *** olive oil so it will do ok on
there and then Iíve got my vegetables all cued up on sticks, so Iíve got a couple bamboo
and also some metal skewers.
The metal ones are nice because they donít get any kind of splinters going on. One of
these ñ one of the bamboo skewers while I was putting veggies on it almost got a splinter
on my finger.
Also when youíre doing bamboo, itís nice to soak them before you put the veggies on
because otherwise they can burn. Iíve got the veggies really nice and tight on these
skewers so they should be ok.
Lost a pepper!
So get all of them on there and then youíll gonna close the lid and let them cook, youíre
gonna wanna turn them probably after about five minutes depends on how high you have
it.
Iíve got it between low and medium and the temperature gauge is still showing very high
because I just turned it down but Iím aiming for about 400F here, you donít want to burn
your veggies and they really shouldnít take long. Iíd say like ten minutes and turning
them once in the middle.
You can also at the same time put something else, Iíve got some burgers that Iím gonna
put on the top shelves here so that they can cook at the same time.
So one thing you gotta watch out for are hot spots on your barbeque sometimes like the
front of the barbeque might be less hot than the back so you might want to rotate where
your skewers are located and sometimes you lose a vegetable, you can just put it in a
bowl and add it on later.
So these guys are done, you can see little bit of grow mark on some of the veggies. The
mushrooms are nice and soft, the zucchinis pretty soft. So youíre ready to go!
