That's a good question, uh...
Well, I don't know.
When I get the bad marks from that professor
of the catering class, I was so offended,
it was more than I can deal with.
This is about done, we'll eat in about 20 minutes.
Let me have some water.
But her class is pivotal, you have to take her class
in order to take the rest of the classes.
So, I'm gonna go in and talk to the director
of the culinary institute.
Boy, that's nice and thick, just the way they like it
down in Louisiana.
Unless he steps in, I'm gonna have no recourse
but to leave the school.

(Amalia) It's been three weeks of school
and it's going all right so far.
But probably the hardest thing that I've had to deal with
these first few weeks is just adjusting
to my schedule.
I'm taking seven classes this semester,
which is a really heavy load.
Most people take three or four.
We want to separate the leg from the thigh.
You see where it bends?
That's where the cartilage is going to be.
(Amalia) We have catering lab and we have catering lecture.
What are some of the things you use a meat thermometer for?
Besides testing meat.
Bread.
Write your impression of what it tastes like.
(female #4) Tonight we're gonna do the puff pastry
and next week we're doing quick bread.
(Amalia) We have an introduction to culinary arts lecture
once a week.
What is celiac disease?
It's a gluten allergy.
(Amalia) We have a restaurant lecture and restaurant lab.
How do we cool a big batch of soup?
Ice bath, surround it with ice.

(Amalia) I am so tired,
I probably haven't been this tired
doing anything before.
So, you know what sucks is my daughter tomorrow
is having her first high school dance tomorrow night.
I don't get to be there and, like,
I would wanna do the annoying mom thing
and, like, take pictures.
(Matheus) Just tell your husband to take pictures.
I don't know if he will.
I feel really disconnected
from everything
that happens in my house at this point.
Because I'm hardly ever there and when I am
I'm burnt out and exhausted.

(Kim) Hi, are you Amalia's mom?
Nice to meet you, I'm Kim.
(Amalia) But my mom was nice enough to say that she'd take
the kids to lunch so that they could get
kind of a chance to see what it is I'm actually doing.
(Kim) Here you go.
Okay, your mom worked *** those pizzas.

I only got to see them for a minute
because we were busy and I had stuff I had to do
in the kitchen.

It's really hard for me to spend time away from my kids.
I'm used to seeing them every day
and this is tough.

(Matheus) I'm Matheus, I'm 22 years old,
I was born in Brazil, but I lived in Fresno
most of my whole life.
Growing up in a Brazilian household,
my whole life I've always been cooking.
The kitchen is, like, the one time
I feel most at peace.

I'm making my way to being
a holistic nutritional chef.
Ultimately, I want to be a personal chef
for people with cancer or people
with just fatal illnesses.
Making homemade food makes people happy
and I like seeing people happy
from something that I created with my hands.
(male #3) You good on all your vinaigrettes
and everything like that for today?
Okay.
(Matheus) Pretty much I never take off the chef's jacket.
I'm either at school or at work,
seven days a week.
So, you said basically everything was done
except chopping up the ahi?
Okay.
Right now, I'm working as the hot line cook
at Johnny's Harborside.
So, I'm learning a lot there.
I think just going to Cabrillo will help me
achieve my culinary dreams a little bit faster
by giving me more hands on experience.
How long is your program, Matheus?
The certificate I want to get is two years.
I think Cabrillo just is more of, like,
homework for working this job,
so it kinda, like, pushes me
more to, like, practice my knife skills
or learn new recipes or whatever.
(Evan) Oh yeah.

I know I have what it takes to be a great chef.
But there's just something in the back of my mind
that not many people know about.
[somber music]

About a year ago, I was undergoing
some pretty serious health issues.
I'm here to see Dr. Chung.
Okay, you can go in that room and she'll be with you shortly.
You're welcome.
(Matheus) I was way too sick to even be on my feet.
As it was getting worse day after day,
I just started questioning what's going on with me.
Why are my ankles and knees
feeling like they're shattered
and why are my gums bleeding,
why are my fingertips turning blue?
[sighs]
Luckily, I had a really good doctor.
He told me that I have Wegener's granulomatosis.
It's an autoimmune disorder.
Hi, Matt.
(Matheus) Basically, my nerve system, my immune system
started attacking a bunch of my own organs
and so it just started trying to shut down my kidneys,
my lungs, and my sinuses.
I'm gonna start off just looking at your hands.
And let me know if anything hurts.
(Matheus) There is no cure for it.
They typically gave you eight years to live.
(Dr. Chung) Just breathe normally.
(Matheus) It was mind-shattering.
Go ahead and put your shoes and socks back on
and then we'll talk.
(Matheus) For a month, I took a dose of chemotherapy.
I've been in remission for three months.
Being in remission doesn't really change anything
because it can come back at any time.
(Dr. Chung) This disease, it's a relapsing disease.
Numbers are something along the lines of 50 percent
within the first year, 75 percent within two years.
And there's a recognition
that disease can flare
when things are more stressful
and the mind/body stress does have an effect.
This is a life-threatening disease.
(Matheus) I have a dream to become a holistic chef
and it's gonna take a lot of work
but I don't want to push myself to the point
where my body is gonna break or I'm just gonna push myself
back into another flare-up.
[dramatic music]

(Jim) Unfortunately, I don't see eye to eye with one
of the instructors and I'm having a terrible time with it.
[dramatic music]
I'm gonna go in and talk to Eric,
the director of the culinary institute.
Unless somebody with more power in the situation
steps into the picture, I'm gonna have no recourse
but to leave the school.

As far as the catering class goes,

catering manager.

I was hoping I would get extra points
for the catering manager's job.
Um...no.
(Jim) Clearly, I've hit a wall.
If my only choice is this one instructor,
I can't stay in school.
I do appreciate the candor.

(female #5) So we're gonna get started.
Tomorrow, we've got a really big event.
It's for over 200 people and it's called
the Harvest Wine Gala.
And this is a really important fundraising event
for the program.
It will be three courses.
There will be appetizers, and a whole lot of wine.
So, we'll be starting to prep today
because it's going to be a lot of work.
Gabriel, Matt, and Kim, we have to make the quiche
and cut up the root vegetables.
Amalia, I put you on the goat cheese tart.
We have to make all the dough for that.

(Matheus) So, yesterday, my gums started bleeding.
It just kind of threw me off
because that was one of the first symptoms
when I first originally got sick.
I'm just paranoid about every little thing.
I'm just so worried about getting another flare-up.
(Sue Slater) There's called "choking up" on your knife.
So you don't even use this part of your--

So we've got this event tomorrow.

And probably finish around 11 o'clock at night.

(Matheus) Oh no, that's gonna be like a 12 hour day.

(Matheus) The chemotherapy just kinda basically went in
and just killed my immune system off.
So, if I tax my body too much,
I can cause another flare-up.
Always there's that underlying thing,
fear of having Wegener's.
Gonna be an intense day tomorrow.
You better go home and pass out.
(Matheus) Yeah, I'm gonna have to be like a bubble boy
and try not to get sick.
I might need to sit down at some points tomorrow
and kinda just relax.
I know that I'm putting a lot of stress on myself
but to reach my goal of becoming a holistic chef,
I think it would be really worth it.

You have to study? How was school?
Yeah?
Since I just found out that we're going to have
a really long catering event this weekend,
I'm gonna have to see if Gabi can watch the kids.
Gabi, I wanna talk to you about something.

I feel like I've asked of her so much.

So, I have to leave fairly early in the morning
and I need you to actually watch them.
I always do.

(Matheus) My middle finger keeps going numb.
[sighs]

(Amalia) Today is the big wine gala.
We're gonna be here all day long and all night,
so, it's gonna be pretty exhausting.
(Matheus) I have to be really careful.
Hey.
I'm worried I'll just overwork my body
and I'm just trying to make it through
without getting sick again.

(Sue Slater) I don't want to see anyone idle.
We have 210 people tonight.
Kim and Amalia, you're gonna be on the bar.
Matt, you will stay back and help expedite.
(Matheus) I'll be running around trying to get things done on time.

(Matheus) Six hours into the wine gala my body started feeling
really tired.
I'm really scared that I'll have to be like,
"Hey guys, I need to just sit down for a second."
But I don't wanna ask in the middle of a rush.
(male #4) C'mon, guys, fast, let's make this happen fast.
Really double speed now, guys, come on.
Yeah.
If you drop it, I'm gonna kill ya.
[sighs]

My arms were feeling tired.
I was scared that they were just gonna give out.

I started getting a little bit of numbness
in some of my fingers.
It's been a long day, I'm already stressed out.

(Matheus) At the end of the wine gala I just was ready to go home
and just pass out.
I feel completely exhausted.

I just woke up today feeling like complete (bleep).
My knees hurt, everything hurt.

that I'm still feeling pretty sick this morning.
I'm kinda throwing up and yeah, I don't think
I'll be able to come in to work.

I just really need to watch every little thing
that happens with my body.
I'm just so worried about getting another flare-up.
I'm in remission, but still have
a counting clock in the back of my head.

(Jim) I'm disgusted with everything about Cabrillo.

(Amalia) I do feel really exhausted.
I miss being with my family,
I miss not being able to see my kids.
And it's been really, really hard.

to only have been sick a couple of days

It was a pretty long day and the next day
I was just in bed, I was so tired,
but I feel a lot better now.
I got a 95 and I was really proud of that
and I think that was from my hard work
and I'm just gonna keep pushing myself.

Are you going back to class?
No, no, no, the school made it literally impossible,
uh, for me to go back.

So what's the plan now then, you've got this job,
are you gonna hold it down?
I took the catering manager's job
and I've got a few other things going on.
Whatever benefit I thought I would get from them
took me 30 days to get it, I got it.

(Matheus) I really feel like I should talk to my boss
about my illness because I don't want to be seen
as a slacker.
The chef doesn't know, you have to do it

It's like I feel like you have all control.
Then you need to wake up and smell the bank accounts.
(Kim) Today I'm interviewing for an internship.
People have a false idea of what it is
to be a chef.
(Kim) I was frustrated.
I kinda felt like I had been demeaned.
I need that ragout done.
(Kim) I have never been in this kitchen before.
I really think he should have shown me around.
