Hi, my name is Amanda Oakleaf. I am owner, head baker, decorator of Amanda Oakleaf Cakes
in Winthrop, Massachusetts where we do custom cakes of all kinds -- wedding cakes, birthday
cakes, sculpted cakes. Anything you can think of we can make it into a cake. And today I
will be talking to you about cake decorating. When decorating cupcakes you can decorate
in one of two ways. You can decorate just for design and color. If you're having a party
and your colors are pink and blue, go ahead and decorate, color your frosting, put a swirl,
and whatever matches your party. You can punch out some fauna decorations and place them
on top. Whatever matches. If you want to do more gourmet style and have it match the flavor
of the cake you can do that as well. For example we have a lemon meringue cupcake that's a
lemon cake and it has meringue butter cream, vanilla meringue, and then we sprinkle some
pieces of graham cracker crust on the top and even a little wedge of lemon. The whole
look of it, the whole taste of it is like a lemon meringue pie. We also do a boston
cream pie so we have a yellow cake as our base and we inject some, using a piping bag,
boston cream filling, some custard on the inside and then we dip the whole cupcake upside
down in a bowl of ganache. Flip it over and you have a boston cream pie as a miniature
version. So those are two ways you can decorate cupcakes.
