and do I have a *fabulous* mango salsa recipe to share with you!
fruit salsas like this
are perfect with fish, chicken, pork chops
tortilla chips, or even just as a side dish.
A mango sort of tastes like a peach, orange, and pineapple all mixed up
and combines well with onions and spices.
Okay, here's what you'll need.
1/4 cup of lime juice.
1/4 cup of orange juice.
3/4 cup of extra-*** olive oil.
1/4 teaspoon of dried oregano.
1/4 teaspoon of cumin powder.
A pinch of cayenne pepper.
1/2 of a red bell pepper in a small dice.
Okay, and here I have 1/2 of a red onion in a small dice.
Okay, then I put in 4 mangoes cubed about 1/2 inch cubes.
And mangoes can be kinda tricky to cut
so I'm gonna give you a tip on how to cut a mango.
First, you start with a mango that's firm
maybe a little, just a little bit on the unripe side
so it's not hard, but it's firm.
Sit it up.
Okay, I get my knife, here's the center.
I go a little bit off center because I want to avoid this big pit it's got in it.
And then I just cut straight down.
Okay. There's half of a mango.
Turn it over-
a little bit off center
And then again, cut straight down.
Okay.
So, now I have 2 halves.
And what I'm going to do is, I'm going to cut through
I'm gonna score this mango.
And you have to be kinda careful that you don't cut all the way through the skin
but the skin is very tough and fleshy.
A mango can be very messy and slimy
if you're not careful with how you do it.
I'm just gonna flip this around
finish it up like this
and then I'll cut the other way.
Keep the knife away from your fingers.
Alright.
And then you just take it, and you just pop it open.
Doesn't that look funny?
It's actually delicious.
Okay, and then you just get in there with your knife and cut it away from the skin.
Just like that.
And that is how you dice a mango.
Alright.
So we'll just push this aside
and finish up with our recipe.
So here I am again
I've got 4 mangoes diced in here
I tell ya, this is worth it.
Okay, then you just stir it up
get it all nice and combined.
Mmm.
The odors, the smell of that onion and that mango is just fabulous.
Okay, and then just for a garnish at the very end
I just sprinkle on some chopped minced mint leaves.
Okay. I can't wait to taste this!
