Hey guys, as promised, here's another version of Plantain Mosa.
I call these ones Plan-cakes because they are pancakes made with overripe plantains.
Here are the ingredients you will need.
First beat the egg very well and set aside.
Peel and mash the overripe plantain till as smooth as possible.
Add some water to bring it to a medium consistency.
Then pass it through a sieve with a wire mesh into the egg.
This is so that you'll get a very smooth batter.
Sift the plain flour into the batter and mix very well.
Add salt, pepper and evaporated milk.
There is no need to add sugar because overripe plantains contain enough sugar for this meal.
Also, evaporated milk contains sugar but feel free to add sugar if you wish.
Mix everything very well and it is ready to be fried.
Set your frying pan over medium heat and pour just enough vegetable oil to grease the pan.
When hot, pour the plancake batter and fry till the underside is light brown.
Make sure the edge of the plan-cake show signs of "caking" then turn it and fry the other
side too.
Here I'm peeping to see if the underside is done. Hahaha
It is done when both sides are light brown.
Repeat this step for the rest of the batter.
Serve with any topping you'll add to your pancakes.
For breakfast, serve with custard, akamu, ogi or oatmeal.
Or just with a chilled drink!
