I can do a comparison
between Pais and Pinot Noir
totally different.
They say about Pinot Noir, it's like a woman,
very elegant, if it was a woman, people say
they compare it with a woman, very elegant.
but I think Pais is the same woman, but in er natural
way, like she's in a garden.
More roots, she's more of a hippie,
maybe.
To say that it is just a revelation,
it was a revelation when I saw Pais.
I thought "this is something amazing". The old trunks (vines)
it's short shoots, it is naturally well balanced,
and with this big fruit (clusters) which is red, not that red,
I was like "wow!"
"This is nice". This was nice because it truly different
from what else was around. What was around it was
very well
maintained grapes, vineyards perfectly
hair cut, and then there was this Pais which was
Goblet pruned, they say "Cabeza", it is
not very high and has branches like this (bends arms downwards)
suffering in the sun and dry soil,
and it was, it is
it is something which
sensitive. Its just
to see it with your eyes,
okay, that is Pais.
So this gave gave me the idea to make some wines. This guy told me
that he had never made wine with it but that it was a bad grape, so I said "ok..."
"I'm going to do some wines with that" and he said "no,t"
"don't. You'll never have a good wine" So of course I decided to make a wine with it.
because they told me not to.
I always disobeyed my father, so
this time I disobeyed to the people who didn't want me to do this,
(OFF CAMERA VOICE: "So people who disobey their parents will enjoy this wine? " Yes.
...Mostly.
