Today we will make 'Paneer Kohlapuri'
Paneer Kohlapuri consists of kohlapuri spices which makes it a very spicy dish
Whenever you feel like having a spicy
And a tasty vegetable then Paneer Kohlapuri is the best dish for you
So let's start making 'Paneer Kohlapuri'
The ingredients are:
Cottage cheese (Paneer) - 250gms
Tomatoes - 4 Nos. (250gms)
Green Chilli - 2 Nos.
Ginger - 1 inch
Cashew Nuts - 1/4 cup
Grated dry coconut - 1/3 cup
Oil - 2-3 tbsp
Green coriander - 2-3 tbsp (finely chopped)
Seasame seeds - 2 tsp
Cumin Seeds - 1.5 tsp
Fennel Seeds - 1 tsp
Whole Garam Masala -
Cinnamon Stick - 1 inch
Black cardamom - 1 No.
Cardamom - 2 Nos.
Cloves - 4 Nos.
Whole Black pepper - 8-10 Nos.
Whole red chilli - 2 Nos.
Salt - 1 tsp or as per your taste
Red chilli powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Asafoetida - 1 pinch
Coriander powder - 1 tsp
For making paneer kohlapuri
first we will grind tomatoes, green chilli and ginger and make a fine paste
And then we will make kohlapuri masala
For making kohlapuri masala we will roast sesame seeds,
cumin seeds, fennel seeds, dry grtaed coconut and whole garam masala
And then we will grind them coarsely
Now let's make paste of tomatoes, ginger, green chilli and cashew nuts
We have made the paste of tomatoes, ginger, green chilli and cashew nuts
Grind this into a fine paste
Now we will make kohlapuri masala
Switch on the gas
Put the seasame seeds into the pan
Dry roast the sesame seeds
Also add a little quantity of cumin seeds
Save the remaining quantity for tempering
We have taken 1 tsp of cumin seeds
Add fennel seeds
Reduce the flame to low
Add cinnamon stick, cloves,black pepper
Peel off the green cardamom and black cardamom
We can also add green cardamom without peeling it
But it is important to peel off the black cardamom
Continuously saute all the spices
We are sauteing spices on a low flame spices should not burn
Spices are now saute
Now we will add grated dry coconut
Saute all the spices again till the color changes
That is when grated coconut turns golden
Our spices are now sauted
We have saute the spices continuously for 1 minute 30 seconds to 2 minutes
Switch off the gas
Take out the spices in a plate so that it cools down faster
Then we will grind it
Spices are cooled down
Let's grind them
Break the stick of cinnamon into pieces and then put
we have taken red chilli powder
but you can also take 4 whole red chillies
two of them you can grind with the spices
and the rest two you can use it while tempering
we have grind all the spices and keep it ready
for making vegetable heat the pan
pour oil in the pan
wait till it gets heated
oil is now heated
put cumin seeds, asafoetida, turmeric powder, coriander powder in the oil
and saute it
also put whole red chillies
now we will add the paste of tomato, green chilly, cashew nuts and ginger
you can also take tomato puree, ginger paste, green chilli paste or chopped green chillies
but on grinding all these things, these will be ready in few seconds
and gravy also tastes good
saute all the spices once the paste starts leaving oil
Let this cook for a while in a low flame
mix all the spices at frequent intervals
till the spices are getting saute
now we will cut cottage cheese and keep it ready
take paneer and cut it into small squares of 1"x1"
this is a homemade cottage cheese
because a homemade cottage cheese is always fresh and soft

for making paneer kohlapuri, the homemade cottage cheese will give a very good taste
because paneer kohlapuri made from fresh
and soft cottage cheese will all together give a unique taste
masala is somewhat sauted now
but we have to saute it more
add red chilli powder to it
and if you want a more spicy paneer kohlapuri then you can add more quantity of red chilli powder
we have added 1/2 tsp of red chilli powder
you can even add 1 tsp of red chilli powder
also add the grounded roasted kohlapuri masala of coconut, seasame seeds and cumin seeds
masala is now leaving oil
a very good aroma is coming from the kohlapuri spices
our masala is now ready
now we will add water to it
add 1/2 cup of water
Let this cook for a while
masala is now boiling
now add salt and coriander leaves
mix it nicely
now we will add cubes of cottage cheese and mix it properly
cover the pan let it cook for 2-3 minutes on a medium flame
so that the cubes of cottage cheese is quoted with all the spices nicely
we have cooked the vegetable on a medium flame for 3 minutes
our vegetable is now ready
oil and spices floats on the vegetable when covered and cooked
take it out in a bowl
Paneer Kohlapuri is now ready
it is the favorite recipe of Maharashtrians and mine also
you can eat paneer kohlapuri with chapati, parantha, naan or rice
this is enough for 3-4 members in a family
