Hello again and welcome to The Taste of my Kitchen
On this occasion I will be making a tea that is usually
recognized for being from India
but in reality, it's made in different parts of Asia Minor
Bangladesh, Pakistan, Sri Lanka
Obviously in India. In each country
they have a variation.
Moreover every home has their own recipe,
and its the taste of home. So ...
everyone has their own recipe.
Basically is a black tea
sometimes by itself, with milk
and sometimes with
spices. The spices
can range from cardamom, pepper
cloves, star anise,
different things. So I'm going to show you
the recipe that I know, the recipe that I like.
and is very practical, because
how many of us have gone to Starbucks or a coffee place
and since is the fashionable tea it is very expensive!
and sometimes you don't even know what it is,
or we don't know if we'll like it or not. The truth is that
Once you learn how to make it at home,
you will hardly go back to the store to buy it.
So... we will use

to infuse, anywhere from 3 to 5 minutes
depending on how strong you like your tea

I will be back in 5 minutes
Well, 5 minutes have gone by
the black tea has finish infusing
Now very carefully, uncover the pot
because now is even hotter
than before.
and now I'm going to add milk
I can add whole milk
you can add evaporated milk
or half and half.
This is to your liking. You have at least 2 cups of
liquid.
Just figure out how strong you would like your tea
I'm going to add about a fourth of a cup

In India, this tea is usually taken
pretty sweet
and usually drank
in the afternoon around 5 PM
Sometimes during breakfast.
We used to drink it
in the morning ... after the
breakfast and then again at 5 pm
then again... I was not in India, I was in another country.
Where ever you go.
the custom is that when you
visit, the first thing they offer
is tea, some kind of fruit
maybe a cookie or what ever is available
where ever you go, just as
in Latin America in many parts they offer you coffee
over there is tea, chai!
so now, all I have to do
to serve it,
in a measuring cup or a pitcher
with a sieve or colander
I'm going to strain it
to get all the spices
and sediment of the
black tea
as you can see, is quite a lot
lets clean up a bit...
since I spilled it
try the tea
see if you like, if it needs more milk, or more sugar
depending on your taste, you can adjust it
traditionally they drink it in
small glass, which I don't have
so I take any small cup
This would be the traditional
top drink it warm
Mmmmmm delicious!
warm. But if you want
to be a little bit more modern or if you want to drink it during the summer
In a glass with crushed ice
pour it... obviously let it cool a little
otherwise it will melt

and drink your cold chai
cold ... hot ...
it tastes great
