Hi! This is Matt with Creative Cooking Corner. And we got invited by Driscoll
to do a tasting party, so today we're going to use some of their recipes. One of the recipes
we're going to do is warm brie with raspberries and pistachios. Okay, I have a small brie
here. I'm going to show you guys how to trim this up and get it ready for the oven.
We're just going to warm it up. So just take it out of the wooden box that it comes
in. Unwrap it. Do is trim the top of it off. Get enough off to expose the cheese, but don't
waste too much. By the way, leave this in the fridge until you are ready to do this
and it makes it a little easier. Going to put it back in the container it came in - the
base of it. Put it on a sheet pan on a silpat. And we're going to put it in a 350 degree
oven for about 15 minutes. Just until it's soft, but not runny, and then we'll dress
it from there. So we're going to serve the brie with crostini's,
which is just a fancy way of saying I'm going to cut this baguette into pieces and
toast them a little bit. So let's go ahead and do that. We just want to get like a quarter
of inch thick - maybe a little more. And I cut them on a bias. It just makes them look
a little bit fancy that's all. Just arrange them on the sheet pan. Okay, you can see that
I've arranged them on a sheet pan. And I'm going to just put it in the oven with
the brie and I'll take them out when they get lightly brown.
All right, so the brie has been in the oven for about 10 minutes now, so let's go ahead
and get our topping ready. All right, so the pan is getting hot. The last thing I'm
going to put in is the raspberries because I have to toss this with a spatula and I don't
want them to get beat up. You want to have really nice looking raspberries for your presentation,
so go ahead and put your pistachios in. Go ahead and pour your balsamic vinegar in. Just
a little tiny pinch of salt. Put honey in. So we'll let this warm up for a minute.
Toss this around. My brie will be ready to come out of the oven at anytime. You just
want to toss this a little bit so it is incorporated. Let it get nice and warm.
While that is warming up, in the meantime, I want to go ahead and grab my brie out of
the oven. Crostini's are looking good. The brie looks beautiful. You can see it's
got some fat coming to the surface, but it's still kind of solid. So what we're going
to do is leave it in the little wooden container it came in. So we'll put the brie over
here and we'll put our topping on top of that. Then we'll pile our crostini's
over here and have a nice little presentation. We'll put maybe some extra raspberries
on there. In the meantime, I've put pistachios, balsamic
vinegar, and honey, have come to a simmer. So we're going to take those off heat and
we're going to just let this cool off for a second. This just has to be warm to go on
top because the brie is already hot. Pour your raspberries in and toss them around very
gently. Don't break them up. Maybe just a little bit because you got to remember people
are scooping them out on a piece of bread.
Okay, so all I did was kind of just pour this on top of the brie. You can see the brie.
I don't know if you can see it's pretty soft. It oozed out a little bit, but it's
not too runny. But it's just right. Put our crostini's on here.
Let's get our crostini's out of the oven. All we're going to do is just pile
those up on here. Don't worry if they get a little bit of the juice on them. We'll
just use some of this rosemary sprig as a garnish. We'll just put that right there
just like that. Keep it simple. Warm brie with raspberries and pistachios and toasted
crostini's. Pretty easy! Very tasty! Spread it on top. Some of the juice . Get a raspberry
and put it on there. Wow! That's good! You might not want to share that with your
