You will need... 2 chicken ***
1 spaghetti squash
1 egg
1/2 cup of almond meal
1/4 cup of parmesan
rosemary, garlic, salt, and pepper to taste
preheat the oven to 350 degrees Fahrenheit
slice the spaghetti squash in half
scoop out the seeds and pulp
bake or boil the halves for 30 to 40 minutes
in the meantime crack the egg into a bowl
Mix the cheese, almond meal, and spices in a second bowl.
Dip each breast into the egg, and then into the breading mixture
being sure to coat the chicken evenly.
place the breast on a baking sheet and bake for 30-45 minutes
When the spaghetti squash is cooked,
carefully scrape out the halves using a fork.
You can season this pasta however you would season traditional pastas
Serve the spaghetti squash alongside the chicken for a healthy italian-inspired meal and enjoy!
