if you are not into Brazilian food you must understand at first
in the Brazilian kitchen we don't have not
so many rules, you can add and take out any ingredient you want
and today we are going to make a Brazilian
Empadão: that it's a kind of
a salty pie. It's delicious, a little bit dry
outside and a little bit wet inside
and very good filled. - That are a lot of ways to make an Empadão
like today we're going to make a chicken empadão but it can also make a
ground-beef empadão anyway, let's go to the
ingredients - At first we'll make the pastry
and then we'll make the fill and for the pastry you'll need
600 gr of Flour 200 gr of
cold butter 2 eggs
6 spoons of water, it's like 90 ml
and one tea spoon of salt
first you put the flour and the salt, and then
you mix it all, until it's... All mixed!
and then you add the butter and start to massage it
until it looks like a thick powder
now that you have a thick powder, you can add the eggs and the water
and keep mixing it until makes a really nice pastry
actually this part it's quite
the hardest part of making an empadão, because it's a very
heavy pastry... and dry.
now that's ready, we can use a tissue or something like this
to wrap it up and leave in the fridge for the next 30 minutes
and in the between time, we can make the
fill
you can change the receip to fit your taste for example
the original recipe, there's garlic and onion I don't like that
so we won't use. You can also use Tomatos
in Brazil we use also another kind of cheese
called Catupiry, but as long as we don't have Catupiry here
we can use Cheddar that it's always great - And for the fill we are gonna use
800 gr of Chicken Breast or Chicken without bones a little bit of bacon
and a little bit of olives the optionals Sweet Kernel Corn and Peas
Cheddar Stock, broth, bouillon... cubes
Olive oil
if you want to, you can use Oregano and Parsley
fun fact: in Brazil, apparently the green color
has a smell, because Parsley in Brazil
is called "Green Smell". Ok, to make the fill you can make the way
you want it
you just have to remember that this cannot be
too wet and don't let it too dry, because we already have a dry pastry
here we are going to start using the oil in the pan
and then we are gonna prepare our chicken breast
and we are going to cook it until it's easy to shred it apart
so, let's start cooking
to prepare the filling
you can shred the chicken breast, then in another pan, mix ecerything up
and add the chicken after finished it, let it rest for some minutes
you can now take the pastry out of the fridge and cut it in two parts
one of them you are goning to use in the base of the pie. Shape the pastry in the pan
and be careful to not leavy any holes
then, add the cooked fill in our case
we alternated it with the cheddar
after that, cover it with the other half of the pastry, if some pastry is left
you can use it over the cover and then brush it with yolk eggs
over it. take to the oven for around 30 minutes
and: voilà! Your chicken empadão is ready!
