Hey guys I'm Caroline Wright and I'm Alejandra Ramos. Today we're making peanut butter and
eggplant Thai curry. Sounds so good. It's a super easy way to do it because we've got
some help from our peanut butter. Yes. I like to do this just from home so i don't have
to go somewhere else for take out. That's a good plan. Great. So we're going to start
off by using a blender. Okay. We're going to start off with some onion. Some garlic.
We're starting by making a curry paste. Oo great. This is nice. We're making a sort of
from scratch curry paste. Yea. Absolutely. What else? This ginger. Oo i love ginger.
It's like my absolute favorite. A little bit of brown sugar. A little bit of paprika. OK!
And cumin. Is that sweet paprika? It is because we're going to get some nice heat coming in
here coming from The Heat Is On peanut butter. It's really great because you actually don't
have to add any other chilis. Thats amazing. It's a perfect, perfect help to this recipe.
Here we go, and if you want to add the cilantro stems. Oh stems. So i bought a bunch of cilantro
so we're not going to waste those stems. That's great. Well the stems have so much great flavor.
Absolutely. Nice. And also a little bit of coconut milk. I love these flavors already.
And then we're just going to blend it. Give it a little mix. So this is what we have.
A really nice, super flavorful curry sauce. So we're just going to go ahead and add this
to our hot pan. Straight in the pan. Give it a nice little sizzle. Smells really good.
You already have all those great kind of Thai curry flavors. Yea. You smell them. Absolutely
you know, just went together in a blender. Couldn't be easier. So what we're doing know
is cooking it ever so slightly. A couple of minutes just to take away that raw onion and
garlic flavor. I tend to not really cook a lot of Asian foods so this is really fun.
Awesome. Yea, I'm learning. The Heat Is on is a really really great starting point. It
gives you so much flavor already entering into the dish. Its awesome. It's super great.
So this is just starting to boil. Its taking away some of that raw flavor which is really
great. We can go ahead and add the highlight of the dish also which is the eggplant. And
we'll add the stock at the same time as well. We'll add that right now? Yea, go for it!
And this is just a regular conventional eggplant? Exactly. And we're also going to add those
peppers. So what's great is we're just going to cook these together until it simmers and
as its simmering its going to reduce the sauce and make it extra flavorful. So about how
long are we going to let this simmer? Just until the eggplant is tender and the peppers
as well so about 10 minutes or so. Oh that's cool. That's like quicker than waiting for
takeout. So this has been simmering for a little while. The eggplant is about to be
tender and we're going to add our snap peas. Ooo i love sugar snap peas. So just about
two minutes before the eggplant is finished. We're also going to season it right now because
we have to add a little bit of extra salt. Of course. As well as a little bit of fish
sauce. If you don't like fish sauce or don't have it you can use soy sauce but I love to
add both either soy or fish sauce as well. I feel like they hit different flavor notes.
I'm also going to just squeeze in some fresh lime juice. Nice. Do you want to go ahead
and taste with me? Absolutely yea. Alright lets just give it a little stir around here.
Alright. Oh wow. Mmm. That's so good. I can't believe you only used The Heat Is On. I know.
And no other chilies. Yea no other chilies. Spicy. Its spicy but so satisfying. Better
than takeout. I like it. Yea. So if you just want to fill up a couple bowls with rice we
can go ahead and eat it. I'm excited about this. I will gladly do that. So just some
nice plain white rice. Exactly. Honestly, whatever you have in the house is completely
fine. If you like brown rice that would work too. So there you have it. Peanut butter and
eggplant Thai curry. So good. Its gorgeous. I can't believe we made this. Lets give it
a try. Alright. Oh man. Oh its so spicy and sweet and delicious and salty. Thanks. Like
