Okay,one of the first things I'm going to be doing today is one of my favorite light
summer salads. It's doing mixed greens, which can be store bought, just a mixture of red
leaf, radicchio, and Romaine lettuce. It's a really great mix! The red leaf has a little
bit of a peppery scent or a peppery flavor to it which I think works really wonderful.
I'm going to be throwing in some grape tomatoes, little bit of fresh roasted corn or freshly
shucked corn (as I like to say), and we're going to be tossing that in a Balsamic vinaigrette
along with some saut?ed goat cheese. So that's the key to this salad, the saut?ed goat cheese.
So, here I have my mixed greens right there, going to give it a light rinse. Kind of toss
these up and down. I like to, although they come store bought and they're packaged, I
like to still give them my own little rinse so it kind of makes me feel a little more
health conscious. Okay, so we have our mixed greens here that we've lightly rinsed off.
We're going to be tossing them in Balsamic vinaigrette, that's our first step. Now this
is store bought vinaigrette, I don't hate you know you can always make it by scratch
or you can always get the store bought, whatever works convenient for you at home. I'm just
actually going to add 1/3 cup to this. I like my greens still crisp and not watered down
with a lot of dressing. You can just kind of eye ball this. For those at home if you
really are doing a diet or something to that nature and you want to weigh it out, by all
means. Don't be afraid to work with your hands. I love working with mine! Give it a quick
toss. So this is the first step to our mixed greens salad. Gosh, now I can smell that,
those flavors are wonderful!
