Hi, I'm Jane and today I'm making a coco-nutty truffle dessert from 08tweaky. That's your
user name, I don't know your real name, but thanks for sending this in. Not only does
it sound delicious, but it works perfectly with the leftover coconut butter I have in
my VitaMix. If you watched yesterday's video, I'll put the link on screen for you, I showed
you how to make homemade coconut butter out of dried and shredded coconut. 08tweaky's
directions state to put one cup of unsalted mixed nuts into the VitaMix. I'm adding it
right on top of the coconut butter and I'm just going to give it a few pulses in the
VitaMix. Here's what they look like. To this we are going to add a tablespoon of cocoa
powder. Use your favorite cocoa powder. You can use the raw cacao or any kind of cocoa
powder that you like. Add that to the VitaMix. Add five pitted Medjoool dates. Remember,
we're going to roll these into truffles and these dates are a sweetener with fiber and
with body and moisture and they help to keep the truffle together. And a sprinkle of your
favorite salt. I'm using this pink sea salt, and am adding a pinch, maybe a pinch and a
half. Then press the mixture into the blades, blending on HIGH, it won't take long, maybe
30-45 seconds. It's like a cookie dough, see, soft like a cookie dough. Now we're going
to take some and we're going to roll it into a truffle, like this... how simple is that?
Then, if you're like me, you put a little of that cocoa powder into a bowl and roll
the rtuffle in it, coating it with chocolate powder. Here you have an all whole food chocolate
truffle. Don't you want to taste that? I know you do, because I do. You're probably going
to get, depending on the size, six to twelve of these.You can put these in the freezer,
you can put them in the fridge or you can leave them at room temperature. Wow. Oh, boy...
you could serve these at a party. You could also roll them in cinnamon, you can roll them
in the dried, shredded coconut... you can roll them in crushed nuts. These are good.
