Today I will be making atta ka halwa or whole wheat halwa.
This is a delicious sweet dessert.
Atta ka halwa is easy to make with very few ingredients.
This recipe will serve four.
To make atta ka halwa we will need:
1/2 cup whole wheat flour
1/2 cup sugar
1/3 cup clarified butter or ghee
10 - 12 raisins
1/4 teaspoon cardamom coarsely ground
about 2 tablespoons of sliced almonds
1 tablespoon of sliced pistachios
1.5 cup of water
I am ready to make the halwa.
First I will make the syrup.
So boil the water and sugar over medium high heat.
And sugar.
Bring it to full boil.
Syrup has come to boil.
Stir it to make sure sugar is dissolved.
Now turn off the heat.
Now I will roast the flour with ghee over low heat.
Its very important to roast the flour over low heat stirring continuously
and this should take about 7 minutes.
So first I will put the butter, clarified butter or ghee.
Ghee is melted.
So now I will add the flour.
And roast this stirring continuously so the flour is roasted evenly
and it should be roasted till it is light brown in colour and will start giving the sweet aroma.
This has been about 6 minutes and it is coming out really good.
But it needs another minute.
It should be little bit more darker in colour and you can already smell the roasted flour.
This has been 8 minutes and flour is roasted really well.
Very nice colour and nice aroma.
So now its time to add the syrup.
Add the syrup slowly because it will splatter.
And keep stirring.
Halwa should not have any lumps.
Now add rest of the syrup.
Mix it well.
And heat can be now medium low.
Halwa is nicely mixed. Now add the raisins.
Cardamom
And half the almonds, other half we will use for garnishing.
Cook for another 2 minutes.
Consistency of the halwa should be thick batter.
Halwa is ready. It has been about 2 minutes.
Now I am just going to transfer this to a serving dish.
I will garnish the halwa.
Almonds
And some pistachios.
Halwa is looking beautiful and ready to serve.
Atta ka halwa tastes delicious.
Serve halwa warm.
Halwa is also known as sheera.
