Today we're going "green" in Kootu.
In the previous webisode, Karthik made Ikan bilis fried rice.

What's "chukka"?
"Chukka" means dry curry.
We're going to stir-fry chicken with spices.
Is this a dish from your native place, Tanjore (South India)?
Nope. Chukka is a popular dish in Banglore, a city near Tanjore.
And green chillies are popular in Karaikudi, Tanjore.
This dish is a mixture of the two that I came up with.
Let's call it a fusion dish then.
I like fusion cuisines.
Since fusion is something we're very familiar with...

What are the ingredients for this Green Chilli Chicken Chukka, Sathish?
We've seen the ingredients to make Green Chilli Chicken Chukka.
Go ahead, Sathish! Let's start cooking!
Let's pour some oil in the hot pan.
Add cloves.
Cardamom
Cinnamon
Cumin seeds
Crushed black pepper
Fry for a while.
Then add curry leaves.
Once the curry leaves are well fried, add garlic paste.
Ginger paste
Fry for a while.
Ususally, ginger garlic paste is used to marinate chicken, right?
But, why are you frying it in the oil?
When ginger and garlic is fried, it tastes very different.
The aroma of the dish will be good too.
That's the difference between marinating and this method.
If we marinate, the spices used may not cook well.
So frying the paste first gives very nice taste.
You mean frying the ginger, garlic and green chilli paste?
Now this is cooked, let's add green chilli paste.
Will this green chilli paste give a green color for the final dish?
Yeah, the dish will be green in color.
It will attain a very nice color when fried well.
Looks like it's going to be very spicy.
That's why I added only a little bit of chilli paste.
You may add more or less to suit your taste.
Fry well until good aroma comes from the chillies.
Now let's added chopped onions.
The onions are very finely chopped.

Chopped tomatoes
We'll let the tomatoes cook well with the onions.
Once the tomatoes are cooked, add little turmeric powder.
Fry till the nice smell of turmeric comes out.

Then add some garam masala powder.

Mix well and add table salt.
Add enough salt to suit your taste...
and fry it well.
