Farmers Are Rock Stars
People need to care about where their food comes from and I feel like at least in Charleston,
and I think it's catching on other places, that this movement is taking off, that they
do care. They're not satisfied with going to M*******’s and getting this, well let's
be realistic, it's terrible, terrible food for you. People care about that, they want
to eat healthy. And I think once they begin to make the connection with the farmers themselves,
like Charleston farmers are now becoming rock stars. They are VIPs in the restaurants that
they are supplying food to; they get the red carpet rolled out. If we had a farmer walk
in, didn't have a reservation, we would get them a table and they would be treated like
royalty. And that is what we're trying to get across, that person is just as important
if not more important that the chefs at these restaurants. Everybody wants to come to these
restaurants and chefs are getting all the credit. We want that credit to get placed
with the farmers and the fishermen as well. It's important. People need to know their
story and know what they go through. Not just the chef’s story and what we do here. What
we do here is a flash in the pan of a life span of that cow or that vegetable. If you
think about how long it takes a radish to grow and then you think about how long it
takes us to shave that radish for our salad. That's an insignificant amount of time in
the life of that vegetable. Somebody spent a lot more time with it than we did. Why don't
they ever get any credit? We need those people's stories.
