Hi, my name is Karl James, owner of Creolesoul Catering located in Round Rock, TX and on
behalf of Expert Village I'm here to show you a crawfish boudin. Lets start with our
holy trinity and that's our bell pepper and basically we're just going to make vertical
slices on the bell pepper. We'll turn that and make small chops. We're going to chop
them kind of small but they're eventually going to go through the grinder sort of, to
be stuffed into the casings. We're using green bell pepper for a stronger flavor than the
other colors. So we got a nice small chop cuts on our green bell pepper we'll just cut
a little more on that. If need right now for this purpose I'm not making that much but
you just increase your ingredients the more you're making. So our bell pepper is chopped,
this is the first part of our holy trinity. See you at the next step.
