Hi this will be a clip made during the process of sharpening Miyabi 7000MCD knives. They
aren't dull but we want them to be as sharp as a japanese katana. We start our sharpening
with a 1000 grid stone. The knives that we're sharpening today are the toughest ones in
the world right now. There aren't any tougher knives. And now the 2000 grid stone. And now
sharpening on 3000 grid stone. And now we continue on 5000 grid stone. And we'll be
using 8000 grid stone but before we do we're about to create some stone paste that will
help with sharpening. And now we use a 6000 grid KING stone. It's a stone from the top.
And finally 8000 grid stone and the sharpening like this one today is the most expensive
one. And now we'll do a sharpness test. We used
a newspaper because it's less stiffer than a standard sheet of paper. And this will show
how extremly sharp the knives are after the sharpening process.
