Today we will make kubbeh two ways
The first step in preparing the kubbeh dough is to wash the bulgur in cold water, changing the water 3 times.
Strain the bulgur, cover the bowl with plastic wrap and let it stand for 1 hour.
Meanwhile, prepare the filling.
Sautee the onions in oil over medium heat for 5 minutes Add the ground beef and break it up
Add the spices and salt
Let cook for 5 minutes or until all the juices are evaporated
Add the sumac and nuts. Keep aside to cool
Prepare the dough:
In a small bowl, mix the spices (allspice,white pepper, marjoram if using)and salt.
In your food processor add the small onion and process
Add half of the spice mixture and process until you have almost a paste
Add the bulgur in batches and process until it is very fine
Transfer to a large bowl
Cut the tenderloin into small cubes (use cold meat from the fridge)
Process for 1 minute only
Transfer to the bowl
Knead well, while gradually adding the ice cold water, for at least 5 minutes
Add the remaining spice mixture while kneading.
Return to the food processor in batches and process until you get a silky smooth paste
Justify the salt, cover and refrigerate until ready to use.
