Hello my name is Mihaly Fabok we are here on behalf of Expert Village. We are here to
learn about wines in the cellar of the Gundel restaurant in Budapest. This restaurant is
the most famous restaurant in Hungary. I'm pleased to be here and I would like to explain
for you the differences between white wine and red wine. Usually the white wine is lighter
than the red wine, but of course we have some very good fully bodied white wine, which has
a great aging potential, but usually red wine has more flavor and more acidity. For example,
the tannin, which is a type of acidity which comes from the skin of the grape during fermentation
when the skin contact is there, this helps to keep the wine so this is a natural preservative
call it tannin. So usually the white wine hasn't got tannin that's why it's a bit lighter
but the white line usually has a higher acidity than the red wine. If you want to have a nice
bottle of white wine drink it around 8 to 10 degrees Celsius. If you have red wine,
it depends on the quality and the style of the wine you have to drink around 14 to 19
degrees Celsius. If you have a full-bodied white wine, also you have to chill it to around
13 or 14 degrees Celsius so it's a little bit higher then the lighter type of white
wine. Usually the white wine is by reductive technology. It means the wine is fermented
and aged in a stainless steel tank to keep the primary fruity flavor and aroma. Of course
there can be some full bodied white wine which is fermented and aged in an oak barrel or
new oak barrel so we all it white wine. Red wine also can be light bodied or full bodied
it depends on the grade variety, the type of soil or the wine making technique, so it
can be light bodied or full bodied. If you have a full bodied red wine which is made
from for example Serra or Cabernet Sauvignon you have to chill it to 18 to 19 degrees Celsius
and this type of wine needs more fresh air so you need a bigger glass or if you have
a nice carafe, the decantation is important to remove the sediment if the red wine is
old we can remove the sediment and also the wine can get more fresh air. This is one of
the most beautiful wine service types in the restaurant, the decantation.
